Lontong, Ketupat or compressed rice cakes is another popular dish. Usually eaten with Kuah Lodeh for breakfast even lunch or dinner, it is absolutely delicious especially when topped off with Sambal Bilis. You can add your choice of vegetables, shredded chicken even prawns.
Here I made with it mum's Sri Lankan Sothi Recipe for the gravy.
So easy & so yummy.
1st step:
Boil rice packets/ketupat, as per packet directions, set aside
Make sambal ikan bilis, set aside
Boil eggs, set aside
Margaret's Sothi Recipe
1 big red onion, sliced
2 cloves garlic, sliced
2 tablespoons fried ikan bilis (anchovies)
1/2 teaspoon turmeric powder (slightly more if preferred)
1 teaspoon salt, to taste
1/2 teaspoon msg, to taste
2 cups water
1 cup coconut milk
Vegetables - of your choice
