In Louisiana there are many different ways to cook certain dishes. One dish in south Louisiana will be completely different in north Louisiana. Accents are different all over the state.
This is how I cook a pastalaya.
1 lbs of sausage
4 chicken thighs
1 lbs pork
2 tbls cajun seasoning
1 bell pepper
1 onion
2 stalks celery
1 tbls minced garlic
1 32oz box chicken broth
1 pack of thin spaghetti
