I always fly with my shortie needles and have needle point protectors on them - i've been lucky but probably have now jinxed myself haha

Hi Eve! We call those places "Han", with a yard rounded by shops. They are basically like the old form of current shopping malls from Ottoman 😀 The name of the shop for no-brand yarns is Kürkçü Han İsak. I guess they have an Instagram account with the same name. It is one of my favorite yarn shops in Istanbul ✌

For knitting needles in hand luggage I've found it's both up to the airline, the airport and then the individual security officer - some airports like Copenhagen specifically mention that yes they allow knitting needles of all kinds (check the faq/strange items list) in which case the security officer will likely accept it too. In all other situations I bring my cheap rounded wooden/bamboo needles and hope for the best. The general EU advisory policy for sharp object is "object that can be used to do harm" which...can be anything. Even if the actual point is really short and it's not even sharp the fact that it's metal might be enough for the officer to say no. so if you don't hate knitting with wood, that might be something to try next time.

I find the airport security so strange. Like yes I get they have to be extra careful and its a serious job. But do you really think a knitter is the type to be doing those things...🤣🤣. I've had nail scissors, forks, even pens taken. I always bring my needles cuz like you say it depends on the person but they can be extra grumpy sometimes :(
