Traditionally, lotus paste is made with seeds. Carb count as per 100g for lotus seeds:
Total Fat 0.5g
Total Carbohydrate 17g
Dietary fiber 0g
Protein 4.1 g
To make a low carb keto version, we are going to substitute the lotus seed for pine nuts since Google said pine nuts are very similar in taste to lotus seeds. Carb count for the pine nuts are as follows per 100g:
Total Fat 68g
Total Carbohydrate 13g
Dietary fiber 3.7g
Protein 14g
