I have been making the Ruled Me zucchini bread for a few years. It is similar to the first one. I have also learned to use the smallest zucchinis that I can find, no seeds and much less water. I just blot with a paper towel.

Made the Sweet As Honey version this weekend. My non-Keto family & I LOVE it! 1 cup of "sugar" would've been too sweet, so the reccomend 3/4 cup was perfect for all of us. Having never baked with coconut oil I was hesitant, but no worries here! It did take the full 70 minutes. Anything over that would've been too long. We are so thankful for this video, Wess 💌

I could never keep up with Keto if I wasn't also OMAD. It's great cooking everything from scratch but I would give up trying to do it for three squares lol. Not that I'm Actually keto anymore. But I am still low carb and Keto recipes are great.

I combined the two recipes. I used the 1 and 1/2 cup of zucchini amount and nuts from the first recipe, and also the spices used in the first recipe. The rest of the ingredients are from the second recipe. Turned out phenomenal!

I’ve never had or made zucchini bread but a friend gifted me a bunch of zucchini so I decided to give it a try. The Sweetashoney recipe was delicious!! The only thing that disappointed me is that I didn’t have any nuts to put in it. I’m making another loaf to give as a thank you to my friend. Wow. I just made the LowCarbMaven recipe and it was such a TREAT! Thanks for doing this challenge. Zucchini bread was one of my mother's "go-to" recipes that I haven't thought of in years...Nice memories. (I substituted vanilla whey protein for the unflavored because that's what I had on hand...cut back the sweetener just a bit to compensate. It was great!)

Yay!!!! Zucchini bread is the ONLY way I like Zucchini 😆 I'm so glad there's a version that isn't only almond flour. I can't stand almond flour baked goods anymore. 😆 My tummy doesn't handle erythritol very well, do you think stevia will work just as well?

Wes used Monk Fruit. It's really good. *Note:* I just checked my bag and it seems it has more erythritol than Monk Fruit. But Lakanto *does* sell a liquid pure monkfruit extract and it's delicious. Doesn't seem to have an aftertaste like Stevia. Of course that is extra moisture in the recipe but probably not much, especially if you used the high concentration version.

Those are little plastic, disposable soy sauce dishes from a local sushi restaurant. LOL. I thought they’d make great prep dishes, so I asked the waitress if I could have some and she gave me 5 of them. I wash and reuse them. LOL. 🤷🏻♂️❤️

You can safely leave it out without much effect. If you wanted, you could probably substitute a 1/2 teaspoon of nutmeg instead. But I don't think you'll miss that much just omitting it. 🙂

I took three weeks off camera and I swear I was AMAZED by Maderma For Scars! Started using it multiple times a day the day after and in three weeks all the road rash was gone! The ankle and my knees was the bruised part. :-(

So what is the raw material cost of each? IMO this is an unfair comparison because the nut filled bread ingredients should cost a lot more and should be preferable in a taste test. But thank you for the video. I'll try the unfair one.

This isn’t a budget analysis, this is a TASTE test. Which one TASTES better. BOTH recipes have nuts. No one anywhere mentioned price or cost or budget - only taste. Please do not overlay your needs and wants on top of this video. To be quite honest, with the almond flour and golden erythritol sweeteners, the nuts were one of the least expensive ingredients in the recipe.

I just went googling to investigate this stuff and check out what I found. www.amodernhomestead.com/how-to-make-squash-flour/ It works just like Coconut Flour in recipes according to the article. Another article estimates 1 gram net carbs per tablespoon (and like Coconut Flour, you don't use all that much because it absorbs so much liquid to expand.)

Update: My first batch was oven dried zukes. It was good but my second batch was using cheese cloth. The cheese cloth method was better. It had just the right amount of moisture. The oven drying method does work better for rice cauliflower. Thanks for the great recipe. I used the Sweet as Honey recipe.

I made the sweet honey one. I did not strain my zucchini. I hate dry quick breads. When I make "normal" zucchini bread I don't strain the water out. Turns out I was right. Was nice and moist. Only thing is next time I'm puting the 1 cup of monk fruit in not 3/4. It's not sweet enough with 3/4. Thank you. Good recipe from them.

Thank you so much for this comment. I actually have a perfectly good “regular” carb recipe I’m thinking of just subbing with the almond/coconut flour and monk fruit sweetener and I add a WHOLE POUND of UNSTRAINED zucchini to my bread.

Just made the lowcarbmaven recipe with double the nuts, it is amazing and no coconut taste which is great because I hate coconut.
