Your video on the WSM is one of the best I've seen! I got a signals and billows recently and had trouble finding many useful videos on the billows. I've also been looking at the deflector plates like the firedial because I've struggled to get my temps up. You did a nice job of describing every detail of your cook. I thought it was interesting how you positioned your lit coals on the far side directly across from the billows. A rep at thermoworks just suggested that to me a couple days ago. Thanks for posting!

Best info I have been able to find on using WSM and Billows! Are you still using that same method on your setup (fire opposite of billows)?

I love my WSM, it has changed my life. The drum smokers are cheaper but they will rust out and are a pain to clean. The offsets have to be continuously managed during the cook. Buy once, cry once, get you something that will outlast you. Mine is well used but cooks better than when it was new and the porcelain enameled coating will last decades.

i cant get nearly that long on mine so far but i think it's because it's been fall/winter so I'm burning a lot more fuel to hold temp

Nice job. I want go try cooking a brisket low and slow on my smoker. Mine is an old smokey Joe smoker steamer am I supposed to add liquid to the water bowl and place that on the second level? What happens if that evaporates during the night? I cooked a turkey in there but I gad to keep checking the liquid and adding juices and water to it all night long. It was the most delicious amd moist turkey I have ever cooked but it took about 20 hours to cook completely.

do you think the BIllows will work just as good if you just use the water pan that comes with the WSM? I am thinking of getting the billows for my 18.5 WSM.

Yes, you will have to figure out how to set up your cooks to make it work how you want, though. It really shines in the last few hours when the coals start to lose temp, the billows will help keep the temp up.

I don't own a billows but I do have a digIQ dx3 as well as a fireboard2 both with blowers. I use them during the entire cook. I use the water pan in my WSM for all low and slows. For hot and fasts I just take the pan out
