Compared to the well-known matsutake and termitomyces, A-Xia prefers the color-changing Green Russula, which has a subtle milky fragrance. Stir-fried with chili and spices, it brings out its umami flavor, and A-Xia could easily eat two bowls! However, this mushroom has a special way of preparation; if not fully cooked, it can be toxic!
