আসছালামুয়ালাইকুম উম্মি আপা আশা করছি আপনি ভাল আছেন। আমি আপনার রেসিপি দেখে দেখে রান্না করে বাবুর্চি বনে গেছি।তাই দোয়া করছি হাজার বছর আল্লাহ আপনাকে বাচিয়ে রাখুক। আর একটা অনুরোধ করছি যে ঢাকার রাস্তায় অনেক সময় গরুর ভুরি ভোনা যাকে ওরা বট ভাজি বলে বিক্রি হয়। রান্নাটা অনেক মজা হয়। কিন্তু খুবই অসাস্থ্যসম্মত। তাই আশা করছি আপনি ঐ রেছিপিটি আপ্লুড করে আমাদের মত কতিপয় পেটুকের পেট রক্ষা করতে এগিয়ে আসবেন। ধন্যবাদ।

For those who do not know Bangla and asked for the recipe. Here it is in English. I tried to translate everything she said as briefly as I could. Enjoy .................................. Take 1 kg green mango, wash them well. Now cut the seeds out and chop them into pieces. Do not cut out the skin of the mangoes. Take enough water and let the pieces soak for about 15 minutes; then rub and wash them. Take them out of water and spread them on a tray. You can also lay them on a clean cotton cloth. Now dry the mango pieces under the sun till the pieces are completely waterless. You can also dry them under a fan, if you don't have sunlight. Now the masala. Take 1tbs of black/white mustard seed, 2 dry chillies, half tbs of black seeds( kalo jira), 1 tbs of panchforon (5 mixed spices), 1 tbs of mouri. Now roast them lightly on a pan. Keep stirring them so that they don't burn. When the spices release a nice aroma take them off the stove and cool them. Blend the spices. Take 2 tbs of garlic paste, 1 tbs of turmeric powder and add half cup of white vinegar. Remember, you must use white vinegar, other types won't work. Now take 1 cup mustard oil and add the masala mix to it. Add chopped naga pepper to it (or red chilli powder. However naga pepper gives a nice flavor and this achar is generally hot). Keep stirring and saute the spices for about 10 minutes. Don't burn it. Now add the mangoes and salt in the masala. Cook the mangoes, keep stirring. When the mangoe skins starts to change color slightly, add 1/3 cup of sugar. You can adjust the sugar yo your taste. Keep flame in medium low for about the next 40 minutes and stir them every now and then. Do not add water, the mangoes will release water by itself and thus will be boiled. Check if the mango is soft/boiled well. Check finally if you need to adjust salt or sugar, add some and cook for 2minutes if you want. Break some of the wan go pieces with your spoon like this. This will make the mango achar more juicy and tasty. Take them off the fire. After the achar is completely cooled off store them in airtight glass jars. Do not use wet spoon in the jars. You can preserve this for about a year and enjoy them.

Kemon acchen? .. I truly love Bangladeshi Amer achar! Can someone PLEASE PLS PLS translate everything she said in English. Need english subs for her recipe. Really wanna try making that recipe here in my own kitchen. Bangladeshi Amer Achar is not available down here. I'm in the Philippines, by the way.
