Deepavali special Motichoor Ladoo
Most of us don't have special boondi maker at home to make Motis of motichoor ladoo.
Here is a simple trick to make Fine Motis using simple ladle used at home

Ingredients
Gram flour-1 cup
Pinch of baking soda
Water as required
Sugar-1 cup
Cardamom powder-1ts
Food colour as required
Ghee for frying
Preparation
For Batter
√ Into a mixing bowl Add gram flour, water ,orange(red+yellow) food color and pinch of baking soda to form a smooth batter
√The batter should be a flowing consistency, as you can see in the video.
Heat ghee( can use any flavorless oil) in a pan. Check the ghee before frying, drop a pea size batter inside the hot ghee. If it floats right back up, means your ghee is ready for frying.
√ Hold the ladle (as shown in video) above the kadai with some hieght, neither too low, nor too high. Pour the batter into the ladle with small holes, you can see small drops of boondi falling in the hot ghee. Fry them over medium to high heat. Don't fry them more than a minute.they should not be crisp make sure to remove before they become crispy.
√ Once done remove boondis from ghee using strainer and place them on a paper napkin to absorb excess oil. Let it cool down for five minutes.
√Pulse them(only twice) in a food processor for fine texture. Keep it aside.
Note- Don't over pulse as it will release oil.
Sugar Syrup
√ In a pan, take1 cup sugar and 3/4 cup water. Start boiling them. Add orange color, cardamom powder.
√ Boil till it is reduced in quantity and has reached nearing 1/2 string consistency. It will take 5 to 6 minutes. Switch off the flame.
√To Check the sugar consistency - take some syrup between your fingers, press and now open your fingers, if i becomes sticky between your fingers half string syrup is ready.
√Add prepared boondi into the hot sugar syrup.
√ Mix the mixture very well. Let it sit for 5 minutes.
When it is comfortable to touch, apply some ghee on your palm and start shaping the ladoos.
√Garnish it with pistachios and saffron. (Optional)
Note- if you observe sugar crystalizing at the sides due to over boiling add half lemon juice
