Madeleine:
Ingredients:
Plain flour 120 grams
Butter (melted) 120 grams
Caster sugar 100 grams
Eggs 2
Vanilla extracts ¼ tsp
Lemon extracts ¼ tsp
Baking powder ½ tsp
Dark chocolate for coating
method:
in a stand mixer bowl beat eggs and caster sugar till thickens. Add in all ingredients except butter. Give it a good mix then add in melted butter, mix gradually with spatula. Keep the mixture in refrigerator for an hour before molding into madeleine shell-shaped greased pan. Bake it at 190 c for 8 minutes or until the edges turn golden brown. Remove from oven and coat them with chocolate, lemon glaze or desired nuts
Doughnut cake:
ingredients:
Plain flour 250 grams
Butter 250 grams
Caster sugar 250 grams
Eggs 6
Almond extract ¼ tsp
Baking powder 6 grams
Dark chocolate 300 grams
Whipped cream 200 grams
Fondant as required
Food color as required
method:
in a stand mixer bowl cream butter & sugar until fluffy. Add in eggs one at a time until fully incorporated. Now add in flour, baking powder & almond extract. Give it a good mix and pour the batter into a lined 9” pan. Bake it at 165 c for 45 to 50 minutes until inserted skewer comes out clean. Remove from oven, let it cool down properly before torting and filling with chocolate ganache (melt chocolate with cream to
make ganache). Chill the cakes in the freezer for 15 minutes before giving donut shape. After shaping, cover it with fo fondant and use food color if needed to make it more realistic
Mix fruit lassi:
Ingredients
Yogurt 1cup
Water 1cup
Sugar as required
Fruit herbion as required
Method
in a blender blend all and serve chilled.
