After a short introduction I will speak Finnish. Its my tribute to Finland, the "happiest" country in the world. Being at home also in Finland, now in Pori is a privilege.
I made "Karjalanpaisti" this time, matching with Sibelius Symphony no. 1. They go well together. Here comes the recipe:
KARELIAN STEW on ”pörkölt” base
This traditional Finnish meal with ”Hungarian spiced” stew is a new fusion.
Make the meat on a pörkölt-base to get this upgraded version.
1 kg of meet (beef, lamb or/and pork)
2 - 3 carrots
2-3 potatoes
3 onions and other root veggies (1 for pörkölt, 2 for the pot) 2 tbsp sweet paprika powder,
salt, black pepper
bay leaves and other spices (according to your creativity) water
1) Cut the meats in chunky pieces. Peel and cut the veggies, potatoes in chunky pieces as well.
2) Make the "pörkölt" base:
cut 1 onion in small pieces and simmer. Add the paprika powder, salt and pepper and finally the meat. Stir well (don ́t burn the paprika). After a while add water to cover the meat and keep boiling on medium heat for 1/2 hour. (This will help to reduce cooking time of the stew)
3) Layer the pörkölt meat and veggies in a deep, large pot, adding some salt, whole pepper and the bay leaves and other spices you like. Make sure to cover again everything with water and put it to the owen for 1-1/2 hours.
Professional ”Karjalanpaisti” eaters will be amazed by the new taste!
