Learn from this recipe how to make "magical" cubes of frozen vegetables at home, ideal for soups, soups and healthy dishes!
You might think these "magic" frozen vegetable cubes are some kind of homemade Vegeta or homemade Knorr cubes, but they're actually much better and more concentrated than any store-bought meal bases!
That's because we choose the vegetables we like, we pay attention to quality, we process them a little and we don't use any kind of preservative or artificial coloring. We make 100% natural vegetable cubes, full of vitamins and we will also preserve them in the most natural and efficient way possible: by freezing.

🔪 Preparation
Clean, wash all the vegetables and put them on a grater with large holes or in a food processor. Those that cannot be grated, for example bell peppers, leeks, cut them into cubes or rounds as small as possible so that they cook quickly.
Put the oil to heat up in a large saucepan and sauté all the vegetables here, except for the fresh greens (chives, chives, parsley, etc.). Add a pinch of salt from the start. I didn't add water at all, the water left by the vegetables was enough. If you use more roots, a little water may be needed.
Keep the heat on medium-low and stir often to keep the vegetables from sticking to the pan. Depending on how large you cut them, it may take 15-20 minutes for them to soften and be cooked through.
Let the vegetables cool, then weigh them so you know how much salt and turmeric to add. Calculate the salt as between 5 and 10% of the weight of the cooked vegetables. For example, for 1 kg of boiled vegetables, add between 5 and 10 g of salt and 2 teaspoons of turmeric.
Also now add the loboda leaves or other fresh greens. Puree everything as smooth as possible with a hand blender or food processor.
Put the vegetable paste obtained in a small tray lined with baking paper and level it as best as possible. Cover the pan with cling film and refrigerate for at least 12 hours or overnight.
The next day, cut the cubes to the desired size and wrap each one in aluminum foil. Place the cubes in a ziplock bag and store in the freezer for up to 6 months.
If you don't want to use aluminum foil, place the vegetable cubes in a casserole dish with parchment paper between them so they don't stick. Then, likewise, keep the casserole in the freezer.
