Pragg thought after Nxf4 he can play Ne7+ forking the King and the Rook and Carlsen could only take the knight with his queen, losing it in the process or just move his King and give up the Rook. However he missed that Magnus can actually take the knight with Qxe7, then Bxe7 and Pragg is up a Queen for a Knight but then Carlsen can play Rxc1+ which forks Praggs King and Queen, so his queen has to take with Qxc1 but then the black knight that formerly took the rook can deliver the final blow with Ne2+ forking the King and the Queen once again and Carlsen would end up with 2 Knights vs Praggs 1 Bishop that survived the skirmish on e7.

Handshakes happen before the game. Offering a handshake once the game starts is an offer of defeat or stalemate. A winning player will never start the handshake. Also, resigning before an obvious checkmate set up you are unable to do anything against anymore is rude. So handshakes are sometimes but not always a thing after the game. Eye contact is also somewhat rude in chess. They play on computers because this is an esport tournament, the electronic board is always shown regardless for viewers and better commentator narration. The headphones is to stop noise and let them listen to whatever they want to without being distracted.
