Do you eat raw fish or not?! Is Sashimi/Sushi-grade fish available?

Yes, we have a fish market in my town. I would not eat raw fish from my local grocery store. 🍣 This recipe looks very delicious and I’m going to try it soon. 😻

Sashimi-grade is tough to find. Best place to go is fish market. Raw fish here is frozen for at least 10 days before being used for sushi. I actually prefer to partially cook the fish before eating.

Hi Ochikeron! This looks delicious and I'd like to make it but I can't have any alcohol. Would you happen to know what I could use as a substitute for the sake and mirin?

For sake, you can use white wine. 1 tbsp. mirin have 1 tsp. sugar sweetness, so you can use sugar instead :)

In my area of the US it's not easy to come across sashimi grade fish outside of sushi restaurants, but if I ever do manage to get my hands on some sashimi-grade tuna I'm definitely gonna try this recipe, it sounds delicious! 😋

Look for frozen salmon or frozen tuna and thaw overnight in fridge! When thawed you can pat dry and use a burner or very hot pan to sear the surface of the fish before slicing. 99% of sushi restaurants outside of japan serve fish that was frozen, because that is regulation for many countries in order to kill parasites within the fish.

My family eats raw salmon from Costco. We we use it for poke. Get the refrigerated package that’s says “farm raised”. Those salmon are eating fish pellets. Unlike wild caught salmon that eat smaller fish. The smaller fish carries those parasites that transfer to the salmon. Freezing is a method, but parasites could still survive. For ahi tuna we get it from our local Asian market called “Hmart” they sell sushi grade tuna!

I wouldn’t go too out of the way for good grades as you’ll be marinating the fish. Of course better grades will make it taste better, but it’ll also kind of be a waste if not eating as sashimi.

If you freeze de fish for, at least, 48h it would be perfect for eating raw. ☺️ In Spain is very expensive to buy sashimi grades, so I usually buy a piece from the market and freeze. 🙂

Hi Ochikeron! Sorry that this is a little unrelated to the video, but I do hope you see it and have an answer for me! I'm pregnant right now, and would love to get my child very involved with cooking just like your children are. How do you encourage them to do this in a way that they find fun? And your children are so sensible and careful with it too! How do you teach them to take such care? And lastly, how old would you say is a good age to start participating in food preparation? What would be the first meal you would involve them in? 😊 If you can make it fun and rewarding for them, they'll more likely stay involved in the kitchen. FInd out their favorite foods and make it with them. Let them create some foods they want. Watch a fun food channel together and recreate that. Experiment with different flavors. Alternate between savory dishes and sweet foods. Even if it turns out messy, they'll feel accomplished. :D Ever seen those commercials with kids making food for breakfast in bed? Messy kitchen, but they made a meal by themselves. Be positive, encouraging, and flexible. I know a lot of people who were forced into cooking while little and they grew to hate it later. Also, you can't sound bitter or be too strict. They'll despise it and start believing they can't cook. Her kids started with the prep work around age 3. It was simple things like stirring, mixing, molding shapes. It's a good way to develop hand eye coordination. They show off some knife skills in the daikon video. They have more kitchen skills than 20-somethings these days. Be sure to have extra ingredients cuz we all know kids will snack on them.

I think my kids love to cook because they see me having fun in the kitchen. Also, my daughter loves cute stuff because of me... etc. Basically, kids are watching you. I always feel tired thinking that I need to be perfect for them, so I am not 😅If you think... Very lazy trying to save my work. haha

Hmm the texture of cooked fish may be little tough but I think this sauce works! I would not marinate the fish for 10 min but just for a minute in that case! Like you do fish shabu-shabu.

American market use tap water to wash Tuna fish, it looks clean but tastes terrible. Go to real seafood market than you can see fishing boat. Only clean outside fish skin.
