@@KV-nh1ts I've been freezing the fresh herbs and spices that I've purchased. They seem to do very well in the freezer. I guess you would want to use only fresh in a dish where it is important to have fresh. As Chef says they keep 17 years in the freezer 😂👍

An alternative to blanching the cabbage is *freezing* it. Simply freeze it whole, then thaw in cool water, and peel off the leaves with your fingers. The leaves will all be perfectly soft, and ready to go.

This looks wonderful, Chef Jean-Pierre. In my French-Canadian heritage, stuffed cabbage was a popular meal, however my mother did not use Italian sausage. It was always ground beef. I bet the spicy sausage is great. I'll have to revive mom's old recipe and substitute Italian sausage. I want to raise it to a whole new level! ;)

No one could ever replicate her meat pies, at least in my opinion, but I may be a bit bias! ;) I'm curious, what did your family call stuffed cabbage in French? We had a very unusual name that I've never heard anywhere else.

I find when I do these meals at the local community center, once in a while, I do a fine dining experience, with white tablecloths and silver candlesticks, I use his recipes and it goes done very well most, of the tableware I get at charity shops very cheap as no one can be bothered cleaning the silver, or they don't want odd crockery sets. The best thing is the volunteers dress up as waiters and the guests in black tie, if they have them, and bring some wine, and it's just a fantastic night, which is looked forward to with anticipation because most of these elderly men only get out a few times a year, and at Xmas, the police bagpipe band and sword dances come in and, it brings the house down, On most occasions, we ask the local supermarket to donate the food and last time the checkout people even came down and acted as hosts, It makes such a difference to the old people and gives the younger one the experience and joy of giving Keep up the good work, Talking saves lives

High my family has Greek and Scottish Irish Welsh French and far back a bit of Norwegian ( Viking) and even mid European... mixture I know..we call ourselves the fruit salid family ha ha ha But our tasts in food ranges ...close to Greek and Scottish Irish and European foods ....cabbage is used a lot and vine leaves use sometimes with mince etc we change the resepies according to the feeling for change .the variation is endless

Hi Chef . . . With my Polish and Ukrainian heritage I've made a LOT of cabbage rolls...even used fancy mixed rice one time and they were so good. Used a sauerkraut whole cabbage so no softening leaves. Yours is another yummy way that I'm certainly gonna give a try. JUST wish I could reach into the screen for a taste...looks so good. I'm not the biggest fan of cabbage so I almost skipped this one. Thankfully I've learned never to do that with Chef JP! My girlfriend makes a delicious chicken chow mein with rice, so maybe one day I'll make her recipe for but I'll stuff it in the cabbage balls like this! It will be so amazing and now I can't wait to do it for her! Thank you as always, chef. You're always such an inspiration.

Chef Jean-Pierre, I have to say that making Mom’s recipe is always the best way to go. How could Mom ever give you bad advice? This stuffed cabbage turned out excellent! Thank you for the best recipes. My wife and I love your stories and we cook with you at least three times a week. Thank you for none of that Tik-Tac-Tok! It is the first time in 26 years that we are cooking together after a 33 year in the Army. The fun of cooking has brought us closer together. I started making this recipe this morning before work and it was becoming clear that the cabbage leaves were not going to work out LOL. ( cluttered counter and watching the clock so I'm doing the '23 skidoo' so I could leave for work ) SO I MADE GOULASH! SUPER DUPER GOOD!!!!!! Rosemary, Sage, Red Pepper Flakes, Poultry Seasoning, Salt, Pepper. didn't have garlic on hand. I forgot to add cheese. Thanks Chef. I made a deconstructed version of this recipe. French accent: "SUPERB!"

Chef, unless it is too expensive, we all like LONGER videos with full details and your fun personality. Please, on TV I know why, but with your own, I don't care if it is 2 hours. We ALL want to hear the stories. Please don't say you don't want to say the video is too long. When making good meat, show us the timing for the vegetables and potato smash. You have recipes for those, but it is math and art to know the timing. What a great recipe! I will make it soon. I have doubled my exercise routine so I can have more. But I get more joy from seeing happy faces than eating much.

Stuffed cabbage rolls have been a part of my life since I was 16. (That's quite a while here.) I always found them to be boring but the way you do it, dear Jeanne-Pierre, invites me into attempting this as an adventure, once again. The Italan sausage, the Prosciutto de Palma and the pecorino is going to take this to a new level. I love the tip about the Ladel used as a form for the cabbage. Good idea. I'm going to put 3x the amout of cheese and it is going to go on top of the Proscuitto followed by the stuffing so that when the ball is inverted to cook, the cheese will be on top and ooze down (hopefully) when it is cut.😛

Wow, those looks good. Who knew cabbage could be so elegant? That looks like a Wusthof Gourmet 8 Inch Offset Deli Knife you used to cut the cabbage ball in half. It's an important knife in the set with it's serrated edge, making it an all-purpose knife to some degree.

Oh Chef! I made this stuffed cabbage on Friday while I was filling ho t sauce bottles. I had worked a hard morning, so I prepared this while I was working. I did not have decent bell peppers, so I made the Coulee from beautiful Red Fresno peppers. This was SO delicious... much better than the recipe I typically use. So wonderful. And it was a great mid-afternoon lunch. Thank you so much for the ladle tip. Worked perfectly. I need to send you a beautiful bottle of Alabama Red Hot Sauce. The best in the south.

Magnifique! Chef, one of the reasons you have 1,000,000+ Subscribers is because of the stories you tell while you're cooking! Your half century of experience in the kitchen is always a wonderful treasure trove for stories and experiences. What your Italian mother did with the ladle hooked on her apron and what she did with the pulp the next day are perfect examples! There are lots of other cooking videos on KZitem if someone is in a rush, but I like to think of yours as ones that can be savored like a fine Dom Perignon!
