In the last six weeks, my mom almost passed away, something terrible happened to someone I know and another friend of mine is being forced into hospice because the medical treatment she needs is so expensive that the hospital refuses to let her eat and now are not doing the treatments that she needs. I have been dissociated for a lot of the last six weeks & easy to tears. My mom is alive for another Christmas and hopefully more than this one. My friend who something terrible has happened still here with us. And my other friend; won't be here next Christmas. Becky's videos are so full of kindness and empathy and nurturing that they have been a balm for my soul. If we all could carry the kindness and love the Becky put into these videos and into her friends and family; the world could be whole.

Since I’m working Christmas Eve and often Boxing Day, too, I’ve started a new Christmas tradition. We have brunch on Christmas Day, for which I serve bacon & eggs, store bought mini pastries, plenty of fresh fruit (it’s summer here, so the choice is amazing), jams and yoghurt and a jug of some juice based cocktail. Doesn’t sound exciting, but it makes for a colourful spread and keeps us happy until dinner. Oh, and most importantly, it’s pretty low-stress, giving us more time to enjoy Christmas.

I live in Poland, our main celebration is on Christmas Eve- it is the big feast we havein the evening. It consists of lots of starters like different salads (cooked vegetables and eggs), fish (herring, cod and carp) followed by beetroot soup and off course pierogi. So for the Christmas Day breakfast we have all the yummy leftovers from the night before. My family’s favorite are fried pierogi!!! (The night before we eat boiled ones and the morning after we reheat them by frying them- soooo good!)

As an Austrian, we celebrate Christmas Eve/holy night. We eat a great cream soup, normally chestnut oder celeriac, and then salmon and beef tartar and great bread and champagne/bubble. In the morning we have a simple coffee and then start cooking for the usual huge family lunch an Christmas Day, so we have a roast or Ragout or some meat with great sides like potatoes and greens and salad, and of course a soup before. There is no such thing as a casserole over here for breakfasts, but i will try one of these for a next brunch.

I never would have done that and hubby says its already paid for itself! I can so much, I give away jams, jellies, salsas, your cranberry sauce and corn relish to all by pool buddies and sisters. We have a heated community pool and enjoy year round exercising. The ones that have gardens give us all the abundance of summer, and others of us supply canned and baked goods. One never knows what they will receive if they go to the pool, even in December. Last week, I got a fantastic ripe cantalope from a farmer. Retired life in south Texas is good. Thanks for all of you inspiration. Everyone appreciates your hard work.

Our Christmas breakfast casserole: Buy pillsburry croissant rolls but just unroll the dough and press in the bottom of casserole dish. Swiss cheese slices on top of that. Jimmy dean spicy sausage browned. A pinch or two of brown sugar over the sausage. Crack 8-12 eggs (I’d like to try a custard- we normally just do a lot of eggs). And whisk in shredded cheddar and pour over the top of sausage. Bake 350 till set.

Becky, how you make everything look so easy, yet with such beautiful results is why you are so loved by so many of us. Merry Christmas to you and yours and may He bless you all in 2024 and years to come. As an aside: I saw that Gruyère/Cheddar cheese in Trader Joe’s and now wish I would have grabbed it. Soooooo, I’m headed back to Trader Joe’s because I forgot lemon curd (you have to try Trader Joe’s lemon curd, Becky. It’s better than my own homemade from my Meyer lemon trees) anyway, so we’ll be getting a few packages of that cheese, one for this recipe and some for the freezer (I’m thinking Mac and cheese too). Oh, also try the caramelized onion cheddar cheese at Trader Joe’s too (excellent on a charcuterie board). We have specific things we go there for if we can’t find them at Tom’s Farms in Lake Elsinore SoCal. If you ever make it here to SoCal, don’t forget to visit Tom’s Farms in Lake Elsinore, and the many specialty food shops here in Temecula SoCal.

Becky! You are a force in the kitchen! Two things: In my family we have country ham and homemade biscuits for both Christmas and New Year's breakfast. Tradition goes back to days when my dad gave my sister and me a country ham from his smokehouse each year. When he found out, after years, that I usually shared some of the ham with friends, he stopped! Still I get the chance to tell the story of this tradition to my people, as I serve a platter of store-bought country ham and my melt-in-your-mouth biscuits.! Second, after watching your video in the middle of last night, I was inspired and put together an individual casserole with what I had in the fridge: free range eggs, medium cheddar, half-and-half, and homemade bread (rustic). Puffed up perfectly. But I forgot the mustard. And I forgot the spray the casserole dish! So so good. Today is my 8th day to be 🧊-bound here in Alabama. Becky, Keep Cooking.

I love breakfast casseroles. I make one that came from a Bisquick cookbook that I call a Bisquick quiche. You put a pound of breakfast meat in a 9x13, and sprinkle with cheese. Then you put 2 cups of milk, a cup of Bisquick and and 4 eggs in a blender with some salt and pepper. Pour that over the top and bake for 50 minutes at 350. You can add veggies like spinach, etc. Very customizable. It's my favorite breakfast casserole.

I always make quiche and partially bake it the day before. That way I can quick bake it Christmas morning but it still tastes fresh baked! We will also have sourdough cinnamon rolls, bacon, and sausage.

Our traditional Christmas breakfast growing up was (and still is) quiche Lorraine and bacon roll ups. The bacon roll ups are always a hit and are a wonderful hors doeurve anytime! Sandwich bread you like-we use sourdough or wheat Herbed cream cheese Bacon Tooth picks Use a rolling pin (or a tall drinking glass to substitute) And roll out thin each bread slice. Spread the softened, herb cream cheese on each slice, roll up in a log and cut in half. Cover each roll with 1/2 slice bacon, securing with tooth pick. At this point you can freeze them in zip top bags and pull out what you want. Bake on cookie sheet in single layer at 375F until golden brown on edges and bacon cooked to your crispness. Enjoy!

So our tradition for christmas morninh is and has always been biscuits and gravy (with spicy sausage) and dutch apple pie with vanilla ice cream. Cinnamon rolls sound like a great idea though :) Thank you for another amazing video, and I hope that you and your family have a wonderful Christmas.

My mother makes hashbrown casserole and that is a MUST HAVE for our family's Christmas breakfast! It's delicious. My cousin makes a sweet dish called monkey bread. If you like cinnamon rolls, you'd probably like monkey bread. Sweet or savory, you're covered!

I've been making Christmas Morning Wifesaver forever. You've given me some new ones to try and I'll definitely make the cinnamon croissant recipe, and one of the others. Something for everyone, my grandchildren are really fussy eaters. Thank you so much Becky, you are inspiring and entertaining!

We usually have Dutch baby pancakes (the ones that are baked and puff up). We started this when our oldest daughter was in 7th grade- she made them for us. She’s now 34 years old and has her own family.

Oh My! I'm definitely going to try making Renee's breakfast casserole. At my local Albertson's store I can get breakfast sausage that has Hatch Green Chile's in it and I think that would be so good! I was even thinking that it could be made with some pre-cooked chicken and it would make a fabulous dinner!!

Becky, I absolutely LOVE your channel and videos! Such a joy and inspiration to watch! I'm from Denmark, and we celebrate Christmas on the 24'th and there isn't anything in particular for the next morning, as we open gifts and feast the day and night of the 24'th :) On Christmas eve, there is a traditional dinner in my house with at roasted duck, white potatoes and brown (actually candied/caramel'ish) potatoes, gravy and pickled red cabbage. For desert we eat something called 'ris alamande' - which is a vanilla flavored rice porridge based dessert. It's made with a rice porridge, and then you cool that off - add chopped almonds, and fluffy whipped cream folded into it. It is beautiful, airy and delicious! It's served with either hot or cold cherry sauce. Then there is a tradition where you put one whole almond in - and there is a little gift for the person who randomly gets the almond :) In my family it was always a tradition to eat the leftovers of the desert for breakfast - because usually you are too full from dinner and excitement from the gift giving and getting, so the next morning you really appreciate the 'ris alamande'!! SO GOOD! and the rice porridge is very popular throughout the month for lunch or dinner, served hot with a lump of butter and some cinnamon sugar on top (but that's not my favorite') I'm going to try a few of the recipes from this video - might become a new tradition! Love and Christmas greetings from little Denmark!

Even better, use grams (or the US equivalents) for solid ingredients, and mL (or the US equivalents) for liquid ingredients. US cups are a different size compared to other countries, but metric is the same the world over
