Notice how he optimizes every ingredient and does it with the least amount of effort . The pearl onion is skinned in 3 strokes . The carrot is also skinned with precision as are the asparagus . A master of technique , time and temperature . Jacques gives us an education on ingredients , preparation , technique , temp and time . The master chef knows how to coordinate everything (mise en place ) and keep track of cooking times in his or her head . One of the best culinary teachers that has ever lived .

For someone to cook like he is cooking and explaining is absolutely amazing. I do see that he is cutting time in the prep and doing what he would do at his restaurant but he is incredible. Him and Julia are amazing

Pepin was years ahead of his time when it came to talking portion size and ingredient quality. This was filmed in the middle of the supersize all-you-can-eat-riblets era, but Jacques is over here making perfectly portioned and well-balanced meals, not scared of using butter and oil and salt, but also not overusing them to cover up poor ingredients or technique. In nearly every video he's made he discusses portion size and he's nearly always right in line with what nutritionists suggest. I bet he never learned scientific nutrition -- he just learned the right way to cook and never forgot it.

I love asparagus, but I'm one of those 10% of people who is cursed because when I pee after eating a lot of asparagus...I can deal with that. I'm just thankful I'm not one of the 10% of people who have the cilantro curse.

i'm lucky in that i grew up eating EVERYTHING. my parents cooked everything under the sun. so i can pretty much eat anything now. most people from my region are lactose intolerant, but i grew up with milk and cheese so no problems here either!

Great recipes from Jacque, such an incredible amount of knowledge! As a side note, once his cutting board contacted the raw meat he should have exchanged it for a new one and washed his hands!! I understand he was on a time crunch with this show, but he was setting a bad example for beginners who may be watching by just wiping his hands/cutting board with a towel. If you did this in a restaurant you would be in some serious trouble with the health inspector!
