If you don't close the jar with the clasp and use some rubber band to close it, you dont have to burp the jars. If the pressure gets high enough it wil rise the lid, and then seal it back itself.

Great content. I’m going to try this. Sauerkraut is really good for you. Tastes great with sausage and beer too 👍. I didn’t realise how easy it was to make.

I love making sauerkraut! I always add caraway seeds (Bavarian style) and some chopped chillis for a bit of kick. Easy to make kimchi too the same way but by also adding some chilli flakes, fish sauce, ginger and garlic. (Also some Gochujang if you can get it).

3:18 I'm using regular iodized salt and it works just fine. What's the matter about iodized salt, can someone explain?

Great content Dr.. . I'm curious, do you think room temperature in tropical Australia ~high 20 - 30°c would work for this process.? Love me some sauerkraut with beer 🍻

Try El Salvadorian Curtido (or Cortido). A much better version of sauerkraut.

I don't bother crushing the cabbage. I prefer it cruncher and saves lots of work. Either leave it longer or put a plate with weight on top. Top up with 2% brine if needed. Great in salads and kebabs. Also pink salt isn't pure so you can add a little extra.
