I've never seen a single hot dog place offer hot dogs anywhere close to how I make them. Melted cheese in a toasted bun, hot sauce (usually sriracha) on top of the cheese, hot dog and bacon on top of that (either bacon wrapped or just bacon wedged in), loaded with caremelized onions on top, finish with seasonings and mustard. Closest I ever find is bacon wrapped with shredded cheese on top (not melted) with grilled (but not caramelized) onions. It's just not the same.

I see so many people preparing potatoes for frying that miss a *crucial* step. After peeling/slicing/dicing, SOAK THEM IN COLD WATER. I prefer to do 2 soaks, a shorter one after a longer one. Soaking draws out extra starch, which holds water, so when they fry, they get crispier, and less "heavy" with oil.

For anyone thinking this is wasteful, just save the trimmings for mash or make some regular fries with the rest. Just because you trim something, doesn’t mean it has to go to waste!
