Makhana Chiwda is a healthy and delicious snack made with roasted makhana's (foxnuts). This easy Makhana Namkeen Recipe is a perfect snack and you can also prepare it for guest, office pot lucks, or after school snacks for kids.
Ingredients
2 Cups Makhana
1 Cup Chiwda Rice (flat rice)
1Tsp Olive Oil
1 Tsp Mustard Seeds
2 Tbsp Chana Dal / Roasted Chana Dal
2 Nos Green Chillies, diamond cut
¼ cup Peanuts
2 Nos Dry Whole red chilli, broken
15 Nos Curry leaves
¾ Tsp Salt
1/4 Tsp Black Salt
1/4 Tsp Turmeric
½ Tsp Chaat Masala -optional
1 Tsp Castor Sugar
Method
Dry roast Makhana on slow fire until dry & crisp. Keep aside. Dry roast Chiwda rice until toasted and dry. Keep aside.
In a wok heat olive oil and add mustard seeds. When they crackle, add (roasted) chana dal and cook on low flame till lentils are light brown and tender.
Add sliced green chillies, curry leaves, dry whole red chillies and cook for a minute.
Let leaves get crisp & dry. Now add peanuts & cook till golden brown.
Add salt, black salt & turmeric.
Cook for 30 seconds and add pan-toasted flat rice. Toss to mix with other ingredients and add dry roasted makhana.
Add sugar & chaat masala.
Toss to combine and transfer it to a bowl. To store, allow it to cool and then put it in a sterilized air-tight container.
