[Flower Jelly]
Water...180ml
Lemon Juice...2 teaspoons
Honey...10g
Granulated Sugar...20g
Edible Flower...a suitable amount
Kirsch...1 teaspoon
Gelatin...5g
[Blue Milk Pudding]
Butterfly pea (a herbaceous flower from Thailand)...5g
Milk...200ml
Whipping cream...100ml
Granulated Sugar...40g
Powdered gelatin (sprinkle in 1 tablespoon of water and let it soak)...8g
[Procedure]
1. Soak edible flowers in sugar water in advance.
2. Add water, granulated sugar, honey, and kirsch to a small pot and heat until just before boiling.
3. Soak the gelatin in water.
4. Add the gelatin and lemon juice, and mix until dissolved.
5. Remove from heat and cool in ice water.
6. Pour the jelly into a mold, float the drained edible flowers on top, and chill in the refrigerator until set (about 2 hours?).
7. In a small pot, add the butterfly pea, milk, and granulated sugar, and heat over low heat.
8. Soak the gelatin in water.
9. Just before the pot in step 7 boils, remove from heat, add the gelatin, and dissolve.
10. Add the whipping cream and mix.
11. Cool in cold water.
12. Pour through a tea strainer into a mold and chill until set (about 3 hours or more).
13. Remove from the mold.
