Great trick for cutting the short rib, most recipes use the LA cut but I prefer this.

Unfortunately I have found Korean restaurants in the US to be lackluster when compared to the amazing restos in S.K. I agree, in the US they make a lot of dishes sweet that shouldn’t be. Thank you, Helen, for showing us how to do this at home!

I totally agree with your remarks about K-BBQ being too sweet nowadays. Went to a K-BBQ place last month in Atlanta, and all the meats and even some of the kimchis tasted too sweet. Didn't really taste like I was back in Korea. Disappointed.

Great looking recipe. Some of these chef's kill me. Why would she think that it is necessary to wipe the the marinade from the inside top rim of the bowl?

Hi👋🙏 You don’t have to wipe down the interior wall of the bowl, if u don’t want to. I do it to keep it clean and tidy. Sometimes, after 48hrs, the interior wall with the marinade residue can look not so ‘clean.’ Again, totally up to you.

I would use freshly grated/pureed apple (extra sweet and ripe apples) if you can’t get fresh sweet pears. I would not recommend using apple sauce since it is cooked.
