lol this is the rural area of Vietnam where education is not something that normal ppl would concentrated on, especially English as a second language, so finding someone who can speak as fluently as her is as rare as finding a needle in a haystack :D

So, soak a cup of white rice 7+ hours or over night. Rinse three times until water is clear. Blend 1 cup of soaked rice with 2 cups of water for 5-7 minutes to get the batter.

We always wash the rice then soak it over night -- longer will be softer !! Drian the water out , 1 cup of rice blend with 2 cups of water for the batter. Hope this will help !!

Thanks a lot for the great recipe. It looked easy but when I tried to make it, I faced some issues. I had some cracks on the rice paper after steaming. So I have some questions !!!! How should be the heat for the pot ? Low, Medium or High ? How thin should be the batter on the cloth ? Or any other tip you think to help me solve my problem ? Her English was ok and simple, what matters should be that we understood what she's trying to convey. she wasn't teaching English right? but cooking and english isn't her native language and some consonants and vowels are hard to pronounce so credits to her for trying and she did a wonderful job :)

Something she missed to tell us. The batter is not just rice and water, potato flour ( starch) or tapioca flour ( starch) is also added, otherwise the batter would be too watery.

This is one of my favorite videos, and I am planning eventually to make these. Did she happen to mention the kind of rice to you? I know they have sticky rice and other...the sticky rice is also packaged as 'glutenous' rice, even though it has no gluten, but it sticks as if it did. Did she tell you what kind? Thank you so much! Also, about how many can you make, on average, with the three cups of the mix? So, the question there, is about how much should the dipper hold? : )

Gluten and glutinous are not the same. Gluten is the protein that antagonises coeliac disease and gives bread it's elasticity, and glutinous just means to be sticky. Glutinous rice contains no gluten, at all. It's a grass, not a grain. 👍

Ra Nia sure 😊 🍚 1 cup of rice ~ soak overnight or 7hours, ~ dont soak in over than 7hours ~ after 7hours/overnight, ~ wash the rice 3 times, so its can be clean 🍚 make the rice batter ~ put it together into blender/mixer = 1cup rice + 2cups water ~ blend for 5-7mins ~ voillaa!! u got the batter for rice paper mixture 🍲 prepare the steam ~ need 1long flexible stick, can be bamboo / alumunium or anything ~ cover the pan with cotton, linen , or.... *sorry idk ~ put the rubber and make sure the steam bounce back when u hit it. ~ make a lil gap between pan and the cover, ~ put the stick inside boiling water 🥘 time to cook the rice paper ~ make sure the steam is hot ~ pour the batter, make a circle until its big ~ dont do back and forward, but circle the spoon, ~ it will make the batter bigger and same size ~ keep circling until the batter getting sticky in your spoon ~ close the lid ~ cook 1min ~ put your stick into the boiling water then take the rice paper gently now u can roll for spring roll 🌯 or you can cut it right away for rice noodle 🍜

In case someone see this comment and have the answer : I tried exactly what she did in the video but sadly the result couldn't be more different... ^^' First my rice paper crackled and was too thick. Then I added tapioca as I saw most of "industrial" rice paper contains some. Rice paper didn't crackle anymore but turned into a sticky ball as I tried to remove it from the fabric, no matter how long it stay in steam... Do someone has any idea why it didn't work? I spend my day looking for tips or recipes but I only find a few videos that show people successfully make perfect rice paper without any explanation about the proceed. Thanks!

First of all, English is not her native language, however, she smart enough to communicate with you in simple worlds, and I be damned everyone understood what she said., why can't you? By looked at these people who replied in this site have misspelled words. I would advise these people to take English class. Oh by the way, I enjoyed her cleared presentation very much.
