Hello and welcome back to my channel. I always appreciate you taking time out of your day to come and spend some time with me.
I have been freezing my extra bread dough when I make a loaf of bread and today I am going to show you how to do it. We also make some copycat big mac burgers.
Here is my bread dough recipe.
2 cups of warm water
1/2 cup of warm milk ( I just add a half cup of extra warm water to above and use 3 heaped Tbsp of milk powder instead)
1/4 sugar
2.5 tsp of yeast
Add to your mixer/bowl and let stand until the yeast starts to bubble
then add
1/4 cup of melted butter
5-7 cups of flour (high grade if you have it) Start with 5.5 cups of flour add more as needed. Don't worry if the mixture is sticky the flour will continue to absorb the water while it rises.
1 tsp salt
Add the milk powder now if you opt to use it
mix until it comes together, and knead by hand for 5-8 minutes or for a few minutes in a mixer.
Put aside in a warm area to double in size.
Once doubled, shape into even balls or into a loaf shape. (If you want to freeze the dough rolls, place them onto a tray and cover them and pop them into a freezer now)
Let the dough rise a second time until doubled in size again. then pop into a 180-fan bake oven for 10-12 minutes.
Once the dough is frozen then bag up. Take them out of the freezer as needed and let them thaw and double in size again, then place them in a 180-fan bake oven for 10-12 minutes. Once out of the oven rub butter over the top and then cover with a tea towel.
Big Mac copycat sauce (my adaption)
1 cup of mayo
1.5 tsp paprika
1/2 tsp mustard
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 cup of tomato sauce
1/4 tsp salt
4 Tbsp pickle juice
1/4 cup of chopped gherkins or pickles
dill to taste
Mix everything together and taste-test it. It should have a balanced flavor and add more ingredients if needed.
