A very nice cheese Dale!! I like milder cheeses myself. I have to admit...Swiss is my absolute favorite!! I am not the Grammer Police by no means but the proper pronunciation is "Sue Veed". I learned this the hard way when I went to culinary school. LoL When you do your fish...be careful and not overcook. It will turn mushy as can be. I will guarantee you won't like it. LoL

Yay, another cheese making video! I can't wait to see what you think of the flavor when it finishes aging. That sous vide is very helpful. Never heard of that nifty gadget until now. That would really make things easier being that it keeps the temperature so accurately.

Well I own a sous vide machine. There is a wonderful channel on KZitem then I’m sure you’d probably enjoy it he has close to 1 million followers just using his sous vide machine. I was excited until I found out you had to stir that cheese for 55 minutes LOL. The only thing that I will consider stirring for 45 minutes at this time. Is our Christmas Torrone. And that would only be with a tagteam in the kitchen helping me LOL. But this did get me thinking. I’ve always wanted to make cheese curds and they are a huge pain in the butt. Chef John has a video up and I am going to go rewatch it. Because using the sous vide machine it might make it a lot simpler to make those cheese curds? My husband has bought me a cheese making machine off of Kickstarter. I can’t quite remember exactly what the name of it is. Fermoggio????? But they are in the progress of making it now and it looks like it’s working out!!!! Go check that out I know you’re as fond of your kitchen gadgets as I am.

Chef journey even makes that comment in the video 😂 I either didn’t catch it the first time around. Or didn’t know my machine yet? I’m not really sure. Thank you Lee. From what I can see on the internet it is something g in the planning stage doesn't seem to be available. I don't think I would trust it any way every cheese has a very different method I can see how one machine would make all of them.

Disclaimer.... have never and likely will never use a sous vide. However, having said that, the advantages of sous vide cooking of meat is that you don't overcook it. Basically you set the machine to the degree of doneness that you wish. Once it is there you take it out and sear the meat in a pan, over a bbq whatever. This serves to carmelise the outer layer without overheating the interior. For thin cuts of meat this would not be an issue however for thick steaks, chops , roasts and such it SHOULD result in a perfectly done cut of meat. At least, that is my understanding of the process.

Went Krogering today, turned my nose up at the cheese! Lol! Nothing is more amazing and delicious, than your home made cheese! Well, all of your recipes have been eaten up by my book club, and they ask for more! Lol! We all love you and Angel, and especially those lovely walks along the beach, even in the snow! I am watching this four years later and no "sous-vide" did not turn out to be a fad, it's the way to go for cheesemaking nowadays. Mine only cost about $100 (Cdn) and I don't know how I lived without it, for making yoghurt as well as meats, etc.

My mom used to make cheese all the time when I was growing up. I believe it was goat cheese, very salty but delicious with a tomato sandwich.

I was born in Caerphilly, not far from the Castle, I don't think the cheese is made there anymore but they still have the annual events called ''The Big Cheese'' it draws a big crowed, battle reenactments, check it out on youtube, it's awesome. Caerphilly castle is a tourist attraction and is said to be haunted by the green lady !! Robert Downey Jr made a movie there in 1995 called ''Restoration'', you will see the castle scene. Doctor Who was filmed there a few times.

The type of sensor used in your cheese fridge (inkbird?) is also used in making small batches of beer. They use a basic immersion heater with it. I am going to be getting both to try it out. I don't drink much, so a gallon at a time is plenty for me and friends. The sois vide is not recommended for this purpose because the grains clog it up. These kind of things are quite ideal when you need specific temperatures over a span of time. Those temperature controllers are also used for turning a freezer deep freeze into a fridge or even a keg... a little big for my brewing needs... but I am debating getting a used deep freeze and turning into a storage for my meads to age out at 50 to 55f. I love making it much more than I like drinking... but Christmas gifts were pretty easy this year. :)

Great video thanks, I’m thinking about using my sous vide machine to hold temperature too so this has helped solidify the decision. On my machine if you hold down set for a few seconds it turns the set temperature beep off so it won’t beep every time it hits the set temp, hope that helps

Excellent video Dale. I have been making cheese/yogurt/butter now for almost 2 years, mainly inspired by yourself. I am going to try this one soon. I always keep the whey from any hard cheese recipe for ricotta. Just curious as to where you purchased the lined Gouda mold? Great idea and makes wrapping and flipping pressed cheese a hell of a lot easier. Anyway always love the videos of your hobby farm, and life on Campobello. Take care from Dartmouth, Nova Scotia.

Caerphilly is delicious. It is a hard'ish cheers but crumbly when you cut it. It has a 'sharp' distinct flavour but is not 'sour'. I hope very much that you like it.

I do remember how you make animal rennet, and it's a little gruesome for a family channel. You can however make it from Burdock root...

Hi Dale hope you and Angel are doing well. I was watching another cheese maker on KZitem and thought I'd ask if you had ever thought of making a spicy cheese. They made a jalapeno and cheddar which looked really good but I know you like things hotter then jalapeno level so was thinking maybe you could do it with your Thai chillis. Just a thought. Thanks for the new cheese video. They also did a triple pepper jack and it was really hot even for them.

Dale, sorry to burst your bubble on this one but both the cheese and the town are very definitely pronounced 'care-filly' (but said quickly so that the two words sort of blend together). I can be very confident about that because I used to hang out with a few folks who had moved from there to live in Bristol where I had a job for a while back in the late 80s, plus my mum is from the Welsh valleys... It's understandably confusing because some Welsh place names beginning with Caer are indeed pronounced 'car' - Caernarvon for example (pronounced car-nar-vun)

If you think we pay more for these cultures in Canada, you're probably right but the worst thing for me is I live right there in Saint Hyacinthe, about two blocks from where they're made and they refuse to let me go and buy them there! So I have to pay $18 for shipping one little envelope that costs $10, how about that?

In Spanish cooking especially deserts they use a method called banjo de Marie is this method that you used for the temperature control for the milk thickening? You place a pot in a pot of boiling water ?

I hope you love your sous vide as much as I do mine. Too bad you don't eat chicken, because it makes a breast so tender that it falls apart. Try salmon in a ziplock bag......it will come out perfectly cooked through. Basically the sous vide process is pasteurizing the meat or fish so that bacteria is killed off at a lower temperature. If you pass the boiling point, cells rupture and the texture of the meat or fish is tougher. Grilling one side when done is optional, if you want a caramelized surface.

PS . the beeping is telling you the cooking time you set is finished. It can hold indefinitely, which is why restaurants love the process.

Wonder how the weights would be if you had goats milk . I know when i did a test on butter fat it was 4 times what cows milk was . milk solids were higher also . I love cheese, but the wife dont ! The closest thing to cheese that she loves is tofu
