when I make my calzones I use a lot of meat. shaved steak, seasoned ground beef, pepperoni, ham and bacon. then I add some cheeses. mozzarella, cheddar, provolone and parmesan. I also add a little marinara. basically I make an enclosed meat lovers pizza.

Interesting you don't see much about Stromboli, which is similar to Calzones. Calzones are a folded over crust pie, while Stromboli is made more like a wrap and usually has meat added. Maybe because Stromboli is Italian-American, rather than an Italian tradition. Much like the differences in US pizza compared to Italy. .

If you were like me, and just couldn't get the idea of little fishbones in your sauce out of your head... It comes in tubes like tomato paste also does (far more convenient than a tin)and add a 1" line to your next tomato sauce. You won't believe what just that addition will change. A little tiny bit is better than too much. And, don't think about it. Just, eat it. It's fine. Don't think too much. Taste before you think.

It's a new York style pronunciation, which evolved from the Sicilian dialect many New York Italians brought with them from the old country. Pasta fazul and goomba are other examples of this type of patois.

Loved the video, but it didn’t work for me. I’ve always cooked my calzones at a lower temp, but I thought, maybe I’m doing it wrong. I set my oven to 475 because I was nervous. I pulled them out a bit burned and still a touch doughy on the bottom. They sealed well though.

I myself am the least bit Italian in the world and say all those things because that's how it's said in the area I grew up in. So go pound sand. The way he's pronouncing it derives from the Sicilian or Calabrian dialects (most Americans of Italian origin are descended from immigrants from these regions). The majority of Italian speakers will pronounce "mozzarella" and "ricotta" exactly as here spelt, which also correlates with the official standard. So what it comes down to is whether or not regional dialects count as 'correct' Italian or not.

Different dialectic pronunciations spoken in the south west of Italy were preserved in the US where they remain rare or became extinct in Italy itself. I studied this exact phenomenon as part of my thesis in comparative linguistics, and all of these phonetic variants and precisely how they evolved are extremely well-documented, so whether *you* as an individual are familiar with it is irrelevant. Look it up if you don't believe me.
