It's easy to dry peppers in a convection oven/toaster oven without burning them; 150 -175 degrees for however long should do the trick. And it makes a difference what oil you use - cheap oil will result in cheap-tasting chili oil. I prefer sesame oil, toasted or not, as you prefer...

made some the other day.. 2 cups canola oil 1/2 cup (ish) of reaper powder 2 cloves garlic fresh cracked black pepper salt....let all mingle together for 3 hours then strained out solids. if anyone wants to try it, hit me up on FB...(p.s. Its warm!)

Thanks for sharing this video. My Peach Sugar Rush and all of my other peppers were prolific this year. I ran out of ideas and started freezing them. I am in St. Louis, MO area and the temps are still in the mid to upper 80° range. My pepper plants are still producing new peppers 🌶

Hmmm....I dunno about this recipe, Khang. That garlic and onion looks a bit on the burnt side and could be bitter. LOL! The recipe I use for my general garlic chili oil is below. I use it on EVERYTHING from chao/congee, to the Vietnamese chicken noodle soup (no, not pho ga, but the one made with elbow macaroni), to spaghetti sauce, to ramen, to all kinds of Western soups, khao poon, peanut dipping sauce for spring rolls, etc. I put in a dollop for my dumpling dipping sauce (basically 1 tbsp soy sauce, 1 tbsp Chinese black vinegar, a ton of sliced green onions, and a dollop of garlic chili oil/sauce). It's a generic sauce and is delicious for anything. I'll try adding shallots to mine next time and see if that makes a difference. KT Food Stories has a great looking recipe that I rewrote for ease of use here (she pinned the recipe I rewrote in the comments) kzitem.info?search_query=kt+food+stories+chili+oil DoodahGurl's Garlic Chili Oil/Sauce Makes: almost a quart 2 1/2 -3 cups neutral oil (e.g. grapeseed, avocado, or vegetable...start with 2 1/2 cups, add more at the end if needed) 1 cup packed minced garlic (if you don't pack it, then heaping cup will do) 2 cups red pepper flakes (I just use the Thai ones or the big container you can get at Sam's) In a saucepan, heat up oil on medium heat. Add garlic and cook, gently stirring now and then for about 10-15 minutes or until garlic is a nice golden color but not dark and is aromatic. Turn off the heat and add pepper flakes. Stir for a couple of minutes until peppers are incorporated and the oil cools a little. Then allow to cool all the way and jar the sauce.

@@KhangStarr I was wondering why you didn't cook the pepper flakes at the end with the residual heat, but it makes sense as you grew your own peppers and want to keep the fruity or other aroma notes. One day when I become a pepper guru like you and have enough peppers, I'll experiment to see.

Over the winter I got all excited about hot peppers now I've got peppers coming out of my ears! Some are so hot I can't even eat them. Definitely need some recipes.

If you have ground up flakes you can add sweet paprika to them “water down” the potency. I have some commercial ghost pepper flakes that are only 3% ghost flakes and it still has reasonable heat.

You don't need Sugar Rush, any Thai peppers or similar will work. Trying different peppers do enhance flavor and aroma, so Thai alone will not give you a certain sweetness.

2 years ago I made some. 1 pint Canola oil. 1 Handfull Anaheim chilies. Sliced as thin as you can. Simmer an hour. Real low, should just barely be bubbling. Strain into an old soy sauce bottle. Still got half a bottle left. 5 or 6 drops in stir fry. I don't use dry red pepper anymore. Love your chan. :)

Ok I did see your chili oil video you posted 3 years ago but somehow missed this one. I want to make some! I've used a meat grinder to make flakes out of dried peppers. It works really well.

You must try to make some, Paula! You will love them with soy sauce as dips. So one thing I forgot to mention is that when you fry the onions and garlic in the oil, they soak up the oil a bit, so instead of 1 cup, I suggest 2 cups of oil for 1 cup of peppers.

Watching you crushing the peppers with your hand, my nose started running, or it felt like it. I have never made that with peppers, and I gave away most of my extra peppers from this season but I will keep it in mind for next year.

I recommend using a mortal and pestle or If using a blender NutriBullet or food processor making smaller batches and using quick pulse. Putting so much in a NutriBullet is going to produce more powder less flake.

@@KhangStarr I've never heard of sugar Rush peach chili but thanks to this video I put some seeds in my basket on Etsy. I've always been against spicy food but lately I've been introducing more and more of it to my diet for the health benefits. I also think they're (chili plants) beautiful.

The container you pour the hot oil into should either be metal or special glassware to avoid any possibility of the rapid heating causing the vessel to shatter.

I think it's a bit the same, except the oil will be combined with other flavors from garlic and onions and oil. Powder alone retains the best natural flavor and aroma of the peppers.
