John presents a seasonally appropriate Apple Cider using one of the Fermentis SafCider strains.
We've made cider in the past and have been happy with the results but not always blown away. Perhaps we are not Cider people. However, that may change a bit now.
This time ,John made his traditional straight dry cider with fresh pressed apple juice from the farm and he fermented with SafCider AC-4. This new strain of Cider specific yeast is focused on making dry and crisp cider. It certainly delivered on that promise.
This cider had a nice apple pumice aroma to it with a subtly acidic note on the nose. The flavor profile was dry and not overly sweet despite the clear flavor of apples in the profile. We liked this cider for its balance of apple fruit flavor yet dry finish and a bright clean flavor profile.
