Thankyouuuuu I wanted to try mexican *Marquesitas* which are pretty similar but filled with cheese and different sauces such as chocolate or "dulce de leche* or any kind of fruit or jelly,but I have no special pan and I had no idea how to make them thinner! Thankyouuuuu and I would really recommend you to try to fill it as the mexican version!!!!! Yummyyy😋

Thank you so much for sharing this recipe and technique!! Just the other day I was combing through Amazon trying to find an egg roll iron that didn't have the waffle cross hatching on the surfaces. With your method, I can save on having to buy another piece of special equipment. My favorite is actually the rectangular phoenix rolls that are filled with sugar, coconut and sesame seeds. I think I'll try your technique for that.

I saw some videos with the electric egg roll maker, if I didn't remember it wrongly, after cooking one side, the other side also needs to be cooked. I guess the batter is cooked for about 10 seconds for each side. In your video, you just cooked the batter on one side. Will it be the same amount of bubbles on both sides if you cook the other side? I personally like the egg rolls that have more bubbles on them. Just like lace cookies. The one with more holes is crispier than the one with less holes. Hey Sabrina! The lace in the egg roll is created by pressing the batter really thin, which an electric press will inevitably do that better than a handmade version, resulting in crispier egg rolls. I only cook on one side to avoid overcooking and making the egg rolls difficult to shape and don't think the cooking time affects the development of additional bubbles. Hope this helps!

corn starch is added to lighten the texture of the wafer, if you're looking for substitutes it's more ideal to use a starch like potato starch or rice!

don't use bread flour!! you can do all cake flour, -- the lower the gluten content the better the texture will be for these egg rolls

osmanthus has a mild floral but fruity fragrance resembling peach or apricot. it's bittersweet so if you add lot so you can compensate it by adding a little more sugar!

if you're adding it for the coconut flavour I'd suggest sticking with dried coconut to avoid making the batter too runny!

I'd say the texture is best if eaten within the first 5 days. Be sure to keep it airtight so it stays crunchy!
