In this video I show how I make elderflower syrup. Elderflower has a delicious aromatic and fresh smell and taste. You can make this beautiful lemonade syrup from the flowers.
Picking the elderflower is actually very easy, because you can find the elder everywhere, especially on the edge of a meadow or road. You can pick the blossoms between May and June. The shrub can grow up to 5 metres high and while picking the umbels it is sometimes quite annoying, because the most beautiful full umbels are of course always at the top. Carefully cut off the full umbels. Be careful because you want to keep as much pollen as possible, because there is a lot of flavour in it and of course you want it in the elderflower syrup.
The elderflower syrup often attracts many small flies and other creatures. Do not rinse off the blossoms, because you will also rinse off the pollen. Go outside to prepare the blossoms. Cut as many twigs of the blossoms as possible to be able to put as many flowers in a bucket. If there are still a few flies left behind it's not very bad, you'll sieve it later so you can remove any remaining pests.
I use 850 grams of granulated sugar and 20 grams of citric acid per litre of elderflower extract. You can buy citric acid at drugstore stores and shops like De Tuinen.
1. Pick a bag full of elderflowers
2. Remove as many twigs as possible, these will give it a bitter taste, and put the elderflower in a large pan.
3. Fill the pan with water until the blossoms are under water.
4. Put a tea towel over the pan and let the elderflower mixture soak for 24 hours.
5. Pour the mixture into another pan through a colander, the elderflower blossoms have done their job and may be removed.
6. Pour it back into the other pan, now through a cheesecloth, leaving a clear blossom extract.
7. Weigh how much fluid you have now. Per litre you need 20 grams of citric acid and about 1 kilo of sugar. I myself used 850 grams of sugar per litre and found this to be perfect in terms of sweetness.
8. Put the pan with elderflower water on the fire, make sure it just doesn't boil, otherwise it will spoil the taste. Add the sugar and citric acid. Heat the syrup and keep stirring until the sugar in the syrup has dissolved. This takes about 5 - 10 minutes.
9. Pour the syrup into clean bottles using a funnel. Sterilize the bottles beforehand with soda and boiling water so you can keep the syrup longer.
