|Black Sesame Castella
5 yolks
30g sugar
5 egg whites
50g sugar
1g salt
30g milk
30g butter
110g cake flour
20g black sesame powder
|Baking process
1. Beat the yolk
2. Add sugar (30g) and salt to the yolk and whip thoroughly until a light color appears.
3. Double boil the milk and butter.
4. Whip the egg whites.
5. When the egg whites start to foam, add the sugar in 2 to 3 portions to make the meringue.
6. Sift the cake flour and black sesame powder.
7. Add half of the meringue to step 2 and mix.
8. Add sifted flour and mix.
9. Add the remaining meringue and mix.
10. Add double boiled milk and butter and mix.
11. Pour the batter into the castella mold.
12. Remove bubbles using chopsticks or toothpicks.
13. Bake at 170 degrees for 45 to 50 minutes.
