How much of the fig flavor comes through with the jelly? I usually buy strawberry preserves because I like the whole pieces in it. I never thought about making fig jelly. I'll have to try that next year.

Hi twobrothersgarden......The figs that I use for the jelly are Ischia Green figs. The tree is six yrs old, and produced about 350 figs this growing season. I'm on the Figs4Fun Forum if you want to chat. Same screen name. Would appreciate a subscription to my channel. Thanks.

Hey forever, I was wondering, what happened to the figs that were cooking? Can you use the whole fig in the jelly, or is that more of a preserves style jelly? Like knots berry far strawberry preserves?

I wondered the same thing. How do you get the juice? Do you have to mash the figs and then screen somehow? Also, I have a brown fig tree. I do want them to be ripe, yes, not green as yours are? Can you tell me, too, what is the rationing as far as cups of juice: sugar: pectin? Thanks so much!!

I made fig jelly a couple of years ago. It had such a beautiful color, but I wonder about the lemon juice. Are figs so low in acid that the jelly's preservation must be assisted by lemon juice? I found the resulting jelly to taste more like red plum jelly except for the initial bite when I got a hint of real fig flavor. It tasted great, but it didn't taste very much like figs.

Oh, I put lemon juice in my fig juice, too, which is why I thought it might have tasted like plum jelly. But yeah, your method perfectly rhymes with what I did my first and only time a couple of years ago. We just got a gas stove to replace a glass-top cooktop, and we've got figs ripening now, so I'm ready to make another batch. But when I say "fig jelly" around here (Texas), people look at me crossways because they're used to hearing "fig preserves" which I can't stand. I don't even to eat fresh figs because of the texture, but I love the taste.

Fig jelly uses only the juice and the figs are discarded...Fig Jam (which I also make) uses the cooked figs as well as the juice in the product.

At 3:08 there is a big jump from boiling the figs to "that juice that we reserved" wha??
