My mom and I made fresh silver queen cream corn. Flour and plenty of butter was used to thicken it. We always used a little sugar to make it a little sweet. We froze bags and served it for the holidays. Her corn was the trophy of every meal. Miss her food.

Make biscuits, cut in half after cooked. Slice of tomato on top of biscuit then add corn. Top it off with crumbled bacon. Yum!

Love it! I love fat back, fried okra, sliced tomatoes along with pinto beans with my cream corn along with either brown biscuits or yeast rolls and of course a good desert!!!! Thank you for all you cook. ❤ Cyrus from North Carolina.

My Mother made the very best cream style corn. We had huge gardens growing up. We hoed our gardens. They were beautiful!! No grass or weeds at all. She would cut it just like y’all. But when she cut the corn off the Cobb, she would flip the knife blade over to the dull side to cream it. and it works awesome!!!! Try it!!

I have taken newspaper and put it down in the sink and then sit by pan on my bowl or whatever I’m cutting my corn up and and that newspaper will catch all those splatters because you can stack at newspaper up, pull it up behind the sink there is however almost as you want it and that works really wellfor me

My mama cut it 2 times and then scraped the cob to get the milky stuff love it-i usually get peaches and cream from farmers market and it does have the milky stuff-then i fry it in a iron skillet with butter and a little milk-works great-haven't had to thicken the milk-it just gets thick itself

I remember watching my grandmother cut the corn off the cob. I don't really care for creamed corn but my grandmother with cook the corn with milk and butter and called it corn soup. That with homemade biscuits is the bomb. My grandmothers name was Maggie. She passed in 1985 and I still miss her. Every time I make corn soup and biscuits I always think of her.

I've done this a few times. For me it works best with a larger knife with a thin blade. I use a Classic Wusthof 5" Santoku. I bought it about 9 years ago when Dillards had them on clearance with a small bamboo cutting board for less than half of what they sell for now. Prices are ridiculous.

I love yours idea of the makeshift back splash, very clever! I have 2 ears of corn in the fridge, wished i was smart enough to figure out the measurements to make this now! Oh well, another time i suppose. I cook for 1, i will try the 6 ears and freeze some; I'm happy to know it freezes well. Thanks ladies!

My granny cut hers that way, the third cut she called it “milking it” oh my when corn comes in, I have all the memories flooding me of me & my granny putting up a truck bed full of corn. She always cooked hers before freezing it, so those were very late nights, waiting on all that corn to cool off enough to bag up and get it in the freezer.

Instead of using a knife to cut the corn, I use a vegetable peeler and it takes off the right amount with each cut. My mom had a cutter that I think she got from Stanley Products that she used for her corn, it would split the kernel before it cut it. (I wish I knew where that went, I'm sure one of my brothers got it). I love field corn, but you can't get it anymore, modern no till farming ruined it with chemicals.

My mom and dad always just cut the top of the kernel once and then scrape the rest, I still do this today. The corn has to be very fresh, picked the same day and creamed because it turns to starch quickly.

Interesting how you said yall never measured anything but had to start for the viewers… I did this when I learned from my mom how to make her dressing. She never measured but I would write everything down as she did it and created a formal recipe from what I watched her do

Hello tammy and yr.sister I got a tip from a radio station and to every one out there listening before chucking your fresh corn use a serrated knife and cutting board cut 1/2 inch off each end of cob per ear of corn microwave each ear 1 min.have a bowl or sink of ice water ready after microwaving shuck your corn almost all the silks will come off with the shuck put corn in cold water til it cool then you can cut corn off the cob and freeze or freeze u some on the Cobb if I had to silk corn again I would never freeze any more corn

I miss my sister so much! I used to be the younger sister, but now I’m the older sister by 26 years! Melissa, I hope the spot on your arm is benign, I’ve been battling skin cancer since I was 33, and that was about 48 years ago! Always use sunscreen! Everyone should use it!

Did you blanch that before cutting it off, or is it raw? I've done it both ways. I like to freeze corn like my momma did. Ever since you showed cutting it off in layers, that's what I do. When you freeze corn, do you blanche it on the cob and then cut it off, or cut it off first and then blanch it? Any advice?

I cook corn similar to the way you cook it. However, I did this last year and froze the corn for the winter. I was extremely disappointed when I took it out of the freezer the corn was rubbery. Could you tell me what I did wrong?

I make my creamed corn by using the entire kernel, none of the corn milk and a bechamel sauce. I don’t like creamed corn any other way. I do not like creamed corn out of a can.
