We made hummus and it is so incredibly delicious! We want you to make it too!
RECIPE IS BELOW
DAY ONE
- Put 16 ounces of dried chickpeas in a big pot
- Cover chickpeas with 4 litres of water
- Add 2 teaspoons of salt
- Cover the pot with a lid and let the chickpeas sit overnight (or at least 8 hours) for the chickpeas to soak
DAY TWO
- Empty soaking water from pot
- Add 10 cups of water (2½ litres) into the pot with the chickpeas
- Add 1 teaspoon of baking soda and give it a mix
- Heat the chickpeas to boil and then let simmer for 30-45 minutes until chickpeas are soft. While the chickpeas simmer, scoop out the foam that collects on top of the chickpea water
- Before draining the chickpeas; make sure to keep 1 cup of chickpea water.
- Drain the chickpeas
- Put half of the chickpeas in the food processor
- Add 1 teaspoon of salt
- Put the food processor on the low setting to blend for 3 minutes
- With the food processor on low; add the ½ Cup of the saved chickpea water through the feed tube let combine for 1 minute
- Add ¾ Cup of Tahini and 3½ tablespoons of lemon juice, and blend for one mor minute.
- Scrap down the sides of hummus in the food processor and give it one more final blend on low until the hummus is nice and smooth.
- Repeat with the second half of the chickpeas to make your second batch of hummus!
(Optional, but SO good)
- Topped with cooked chickpeas (save some from your batch before blending them) olive oil, parsley and black pepper
