Made Kalua Pig in the imu using Boston Butts. Also had some chicken, sweet potatoes and poi taro cooked. Cook time was approx 12 hours for mines. Cook time usually depends on the size of the pig, the type of fire wook used and the amount of heat. It ranges from 5 to 12 hours. Instead of covering the tarp with dirt to seal the heat in, I used a water trench around the perimiter of the imu, sprayed some water over the trench and covered evertthing with the tarp. Then I filled water to weigh the tarp down sealing the heat. If it had rained, it would have been even better. Did it this way three times and everything came out great. Just my way of making Kalua Pig. Aloha
