Surprised there was no mention of semolina flour for pasta making. I've made different pasta dishes from scratch and find semolina flour can make a big difference in some dishes.

Errata @ 4:28, "4 cups of flour to 5 cups of eggs, whole eggs" Is it 5 eggs or 5 cups of whole eggs could confuse someone because how it is heard (since 4 eggs will be about 1 cup of liquid egg 5 cups of whole eggs would be a lot of egg) I think most watching will not be thrown off, and just before that you call out 4 eggs... cheers 🙂. 🥚🥚🥚🥚🥚

Mia madre ha Imperia da oltre 60 anni 🙂 Per la ricetta della pasta ti consiglio: per una persona: 100 grammi di Semola di Grano duro Rimacinata ( o, in alternativa, la farina tipo 0), 1 uovo intero e sale a piacere. Puoi provare anche la versione senza uova (ottima!!!) : per una persona: 115 grammi di Semola di Grano Duro Rimacinata (oppure Farina Tipo 0), 75 grammi di acqua e sale a piacere. Un saluto da Roma. 😘

@@tomwadek Just a heads up, weight is far superior for any kind of baking over volume, especially in something where ratios and hydration levels can be very important. Depending on the humidity in your home, hold old your flour is, how it was milled/stored etc. can dramatically alter volume measurements by as much as 30%, sometimes more because people are very different in terms of how much or little they pack a cup while measuring. But all of that is not an issue when doing weight measurements. Also, it's even more important when doing something like eggs, because a large egg for you might be 20% smaller or larger than it is for me, so having an actual weight of the eggs takes a good amount of the guesswork out in getting the right ratio so you don't end up with a wet sticky pasta or a dried out one, which if you're new to it especially you might not know to add flour or liquid to fix it. It's still not perfect, because even at the same weight some eggs have a higher ratio of yolks or whites, which can throw things off a little bit because whites hydrate and yolks really don't bring a lot of hydration, but it's still far better than just giving the quantity of eggs, which again can vary dramatically in size depending on brand or country. In short, for almost all cooking, but especially baking where ratios are king, volume measurements are generally a sign of an inexperienced baker, and puts your entire video's credibility into question for a lot of people. You seem to know what you're talking about otherwise, and I enjoyed your video overall, but it's little things like this that can make or break the growth of a smaller channel so I just want to give you that suggestion. This is my first video of yours I've watched, so for all I know you've already learned this lesson and use weight now, but just in case I thought I'd leave this here in hopes that it helps you out for next time.
