Showing my favourite way to use our garlic scapes in the summer! It is basically a bonus to growing garlic, but makes the most beautiful products to tuck away for winter! Another option for scapes it to dehydrate them and grind them into a powder to make a much milder and delicious (green) garlic powder!

Garlic Scape Pesto:
Approx 20 scapes (300g)
2/3 cup cashews (you can also use pine nuts)
2/3 cup asiago or parmesan cheese grated
3tbsp - 1/4 cup lemon juice
1/4 tsp salt or to taste
pepper to taste
2/3 cup avocado or olive oil
- chop the scapes and add to a food processor or high powered blender (I find blenders tend to work best if you like a really smooth consistency.
- add all remaining ingredients and blend until desired consistency.
- serve on warm pasta, add to sauces or pasta dishes, use as a dip or on sandwiches. So many ways to eat pesto!
To freeze: pour into ice cube trays and freeze. Store cubes in a ziplock bag up to 6 months.
