I have cooked pizza in my regular gas oven following instructions from professional chefs and it has never been so overcooked and dry with burnt cheese like the one in this video. Sure the gferrari might give a better end result but regular ovens dont give you such a bad result like in the video either.

Mine does this unless I par-bake a couple of minutes before putting cheese on. Cheese usually cooks quicker than bread in standard oven I think!

12 minutes is WAY too long. Preheat the oven with the stone on the top tray, or 2nd to top tray to 300°C (or higher if possible). Then switch to top grill, if available and keep preheating. Bake time should be 5-6 minutes. You won't get a good charring, but it will still be delicious (and not hard like a brick). If you're not happy (too pale, not crispy enough on the outside), you're probably using the wrong flour. Try dedicated pizza flour. It's best to make the dough 1 or 2 days before. Make balls of dough and let them rest under a damp towel or in an enclosed container at room temparature at least 4 hours before you're going to make pizza. Per 1kg flour, 600ml water, 2 teaspoons of salt and 1/2 pack of active dry yeast. Knead it for at least 20 minutes per hand, or about 10 minutes in a kneading machine. The long kneading time is necessary for the gluten to develop properly. The long resting time is necessary so the dough can relax.

thanks for the tips:) I recently bought a pizza steel plate to use instead of the stone and is better, I will also try your recipe :) I will put a video with the steel plate vs stone ... my regular oven has the max temperature at 250 :( but in the future maybe I will buy a dedicated and more professional oven that can reach higher temperatures

@@lustfortaste I actually also just got the G3 Ferrari last week :) It's definitley much better than a normal oven. I'm really curious about the steel plate. I saw some video where people preheated it on the stove top like a pan. Sorted Food has a video where they use a pan to start the baking on the stove top, and then finish it in the oven.

@@clemensruis I was thinking about getting a steel but I don't have a broiler in the oven so it renders it even less useful. The price of the oven wasn't a lot more than the steel, I'll be able to preheat within 10 mins, cook pizza within 5 mins and even use it outside in the summer.

I was going to leave the same comment but you beat me to it. Also it looks like the Ferrari oven doesn't distribute the heat equally, one side of the pizza looks ok, the other half is undercooked.

I was bought a G3 Ferrari pizza oven for Christmas and I love it. Making pizzas has become somewhat addictive, and while it is expensive I make pizzas every week now, so have probably broken even, compared to if I was buying pre-made pizzas. Just came on here to see how my pizzas compare to others being made with the G3, and I'm pleased they look exactly the same. great video!

Did it take you a while to get used to it? I also got one for Christmas but my pizza making has been an absolutely disaster 😂
@teikarate
Жыл бұрын
@herrklamm1454 Yes, I had a lot of failures when I started. Coating your hands in oil, or dusting with semolina flour to make the dough balls helps, and coating/dusting the balls with semolina flour before flattening them out helps also. Keep watching videos like these and it will all come together. If it's getting the right temp that's the problem, one of those temperature gun things will help to let you know when it's good to put the dough on. Good luck!

For the home oven, it's probably better to use good quality baking steel. It also works to cook it first with only the tomato, take it out and add the mozzarella and basil so it will be cooked evenly towards the end.

Don`t get it. why did you cook the pizza for 12 min in the regular oven? in a regular oven as the same as a pizza oven you need to to watch them as the minutes goes by, there is no spesific time to set it on. I never had a bad pizza in my regular oven. I don`t complex things ether as the the most of the youtubers do. I make my dough, let it rest for 2 hours and cook it. My oven goes to 250 °c I do preheat the oven before use. I measure the heat so I know hot the stone are. I also cook at the lowest bar in the oven.

Hello! Yes, the time was a little bit too long when I made that video, but I made it pizza in the regular oven, and somewhere around 8 minutes, I had to let it to be cooked. I prefer the pizza one , but 2 months ago, it was broken, I had a short circuit somewhere because my fuse from the electric panel was switched off every time I tried to use it, maybe a cable was melted. So Yes you can have a shorter time but the lower temperature and the bigger distance from the heating source, it makes a difference. This is my opinion

You can make a better pizza with home oven. I first cook the pizza with only tomato sauce with light aluminium baking tray for 6.30 min on the bottom of oven and bottom resistance and than with mozzarella for 4 min on the top of the oven with only top resistance for 4 min. Obviously always trying to have red resistance during the cooking.

You don't need to buy anything, we cook pizza wrong at home, because our ovens don't get hot enough we end up baking the pizza, the best thing to use is our grill or broiler this gets up to a higher temp all you need to do is this. Turn your grill (Broiler) up tofull and wait for 5 mins, then place your pizza tray under your gril or broiler, Let it sit under the broiler for a couple minutes to fully heat up, On a small, floured and semolina ,piece of cardboard, lay out your pizza (you need something small enough that you can slide the pizza easily onto the tray, cardboard works well for this) Give the cardboard a shake to make sure the pizza will slide off easily, then, slide the pizza onto the center of the tray and place under your grill or broiler, and cook for 1 minute 35 seconds, there's a very slim window of time that the pizza reaches perfection, because of the very-intense-and-short cooking method. It may take a couple pies to get it right. You want a good char on the crust and bubbling but not burned cheese.
