While visiting Lake Bled we tried many of the local Slovenian specialities, including a number of potica, a sweet rolled bread filled with nuts and fruits. Today we're going to attempt making potica with what we have available in our Airbnb kitchen at Slovenia's Lake Bled!

Potica Recipe:
Ingredients:
- 2 packets (14 grams) yeast
- 1 cup milk
- ¾ cup butter plus more for brushing over the top
- ⅓ cup granulated sugar
- 1 teaspoon salt
- 2 eggs
- 4 cups flour
- 500 grams walnuts
- ½ cup brown sugar
- Powdered sugar
Method:
Make the dough:
- Add 2 packages of yeast to ¼ cup warm water, let sit for 10 minutes until very bubble
- Warm one cup of milk on the stove and then let it cool to be warm, but not too hot, it should feel warm to the touch but not burning
- Melt ¼ cup of butter
- Add the butter and ½ cup granulated sugar and 1 teaspoon salt to the warm milk
- Add 2 eggs to the mixture
- Add the bubbly yeast to the milk mixture
- Add 4 cups of flour, one at a time
- Knead until it is a smooth ball
- Place in a greased bowl and set aside for 1-2 hours, until doubled in size
- After it has risen, punch it down and let it rise for another 10 minutes
- Preheat oven to 350 degrees fahrenheit of 175 degrees celsius
Prepare the filling:
- Chop the walnuts
- Melt 1/2 cup of butter
- Combine the butter, walnuts, and 1 cup brown sugar in a bowl with cinnamon and vanilla if you have it
Fill and Roll the Potica:
- Roll out the dough and cover it with the filling
- Roll up from the edges them roll in a circle
- Melt about 2 more tbsp butter and brush it over the top
- Bake for 35-40 minutes, until golden brown
- Slice and serve!
