Love the videos. Can we add the peptic enzyme after pitching the yeast or does it have to be at the begining?

You can add the pectic enzyme anytime before and during fermentation. Adding the enzyme after fermentation will not be as effective. I believe it has something to do with the alcohol reducing the effectiveness of the enzyme. It will still work, but you may need more of it.

Great video. What do you do with the fruit pulp from your wine making? Would it be suitable to make other things like jam or does the yeast make that impossible?

The resulting pulp is not suitable for anything but a compost heap. You cannot reuse it for anything. It's generally so gross that I don't video that part of the wine making process showing me shoving it down the disposal.

When you say one gallon, do you mean British gallon (4.5l) or American (3.8l)?

Here in the U.S. we use the imperial measurement, but in my videos I frequently use 4.5 liter carboys.

If you are referring to secondary fermentation, the video only shows the steps going into primary. Secondary is detailed in a standalone video, as are all the phases between primary and bottling.

@@DIYFermentation A double fermentation is much different than secondary fermentation. It is a process that has a 2 part primary fermentation. After the initial fermentation, more must is added to continue the primary fermentation. That can take out more flavors, and help make the wine more smooth.

James Welch- you mean like you started at 1.100 then got down to .990 all done...and then you added more sugar or juice? I think that would increase abv for sure. At some point the yeast would stop working though but you might end up with an 18% wine. I personally like lower abvs, maybe 13-15% at the most.
