What do I do if the muffins are “doughy”? They registered cooked through, but were doughy.

I always put my muffins in a 350°f oven for about 10 minutes after I take them out of the skillet to make sure they are cooked through. Also make sure they are cooled to room temp before using them. If you cut/split them when they are warm the center can still be wet.

I actually landed here again because this video was in my playlist, and I have another of her recipes (sourdough banana nut muffins) bookmarked on her website and I came looking for her channel to find the muffin video; which I did not find a link to on the page. Nice and very simple recipe that I will definitely try out. A quick tip is to not mix things on top of your electronic scales as it can easily mess up the sensors and the calibration. Also, adding salt into the starter wet mix is counter productive as it will kill the yeast. Add salt after flour and you will get a much happier yeast.

I’ve tried these twice now and I just can’t get them to be very big. They’re like little hockey pucks. I think I’m better off with dough that you have to measure the weight rather than roll out to a certain thickness that I can’t seem to match. Your recipe says 10 servings, but in your tray you have 8. Maybe that’s why yours are so much bigger??

Hey Amy, looks like another great recipe! Just to let you know here in the UK it's traditional to use use a fork when cutting the Muffin in half. All you do is prick around the centre with the fork and then pull it in half; this creates a rougher texture allowing more flavour between the nooks and crannies! Thanks for the video, will definitely give this a try

Thanks for this recipe demo , made the dough tonight , doubled up and used mix spelt , whole meal, and whole meal spelt with half runny honey half maple syrup, excellent dough.......great video and clear demo 👌a Scotsman makes English muffins 😂 shed loads of starter left , what’s next? Other muffin flavours eg do they work with sundried tomato or I guess nice with some herb mixed in ?

Finally someone lets the dough rise overnight on the counter! I have yet to use starter but I've done the same with dry yeast. It overferments and smells delicious like beer by the next morning. Is that the way they are supposed to smell? I've never tasted store bought English muffins. Thank you

I've used this recipe with yeast instead of sourdough starter (Gasp!) In lieu of the starter I added 50g of water and 50g of flour. 6g of (instant) yeast is about 2 teaspoons. The first rise, after the kneading took about 2 hours and the second rise, just before they are baked took about 30 minutes.

Mine came out looking beautiful but were mushy inside. Did I have the stove too low? I have an induction stove so I have very good control of the burner temp. I don't have a lid for my largest frying pan so I just used tin foil. Was that the issue?

I do a sourdough liquid version with Onions, seasoning. It is like an everything English Muffin, but with a twist. I also have a fast 3 hour version with yeast support and a long version too. I like to make all type of sourdough treats, Thank You, Peace, Love, Laźaro

Turned out VERY poorly for me. Took WAYYYYYYY longer to cook than the recipe indicates (40+ minutes even after turning the heat up, and the sides were still raw), poor texture, disconcertingly sour taste (and I like sour. I was just expecting it to be on the mild side rather than like an aggressively sour loaf). Ended up putting the rest of them in the oven at 375 and they turned out a bit better, but still not great. But I will definitely not make this recipe again. I am sure the responsibility for this lies with me (so many other people had a great experience) but I was attentive to the directions so I'm not sure what happened. I did use some whole wheat flour (~25%, with a very small increase in hydration to compensate), but that shouldn't have thrown the recipe off this much. Such disappointment. :( I don't usually leave negative comments and I don't intend to be mean, but in case someone else has the same experience I don't want them to be shocked, given how positive the rest of the comments are.

I was recently offered some sourdough starter, but feeding, and/or making bread every week seemed daunting. In addition it felt to wasteful to discard unused starter. I so appreciate finding your kitchen videos on using sourdough discard. Kiddos on resourcefulness! I’ve made these SD English muffins three times now and they get better each time. I’ve yet to try the cinnamon rolls, but it is next on my list. Thank you very much.

Made these with 100% hydration sour dough but the dough was quite sticky. Either there is a big difference in my UK flour or maybe your sour dough was a lower hydration? Anyway Amy, I managed to get them into the pan, with difficulty, probably spoiling the rise but they taste great all the same😊

Just made some, and they came out really nice looking. The temperature was a little hard to figure out though. I cooked them just under the medium mark. I have an electric stove. It was pretty cool watching them plump up. Thank you for the recipe! 😊

Update Amy, I make the muffins like I told I was going to do. I made them square and cooked them in our black pan( cast iron).I do not use any oil to cook any bread on top of the stove.My wife and I like them very much.Another great bread for us to share.Thanks so much again .

Amy Duska: I don't know what I did/didn't do, but this batch of dough was really stiff, difficult to work with. Possibly not enough milk. Also kitchen temperature was about 62F. Any idea? I'll let you know how they taste and Thanks

I have tried this recipe 3 times and while the taste is excellent I am having so much trouble with the sticky dough. It's hard to cut the circle and retain the shape while transferring to the sheet with cornmeal. The dough didn't rise much after second proofing either. My starter is active-fed. Can you kindly tell me what I am doing wrong?
