Hi all, today we are making a delicious prawn and chicken curry. This recipe requires a few steps and is more complex than our everyday recipes but it's good to sometimes carry out the extra prep work and steps while cooking to get the most delicious result!
Ingredients:
For marinating the prawns
300g prawns, peeled and rinsed
40g unsalted butter
5 cloves of garlic (our garlic is quite strong)
a sprinkle of mixed herbs
Dash of lemon juice
1 tsp soy sauce
a generous sprinkle of paprika
a grind of black pepper
For marinating chicken
400g chicken breasts, cut into strips
1 tbs chicken spice
a sprinkle of mixed herbs
a splash of lemon juice
a grind of black pepper
1 tbs olive oil
For a quick stock
shells and heads of the prawns, rinsed
sprinkle of mixed herbs
1 tbs vegetable stock powder
2 cups (500mml water)
For the curry
1 small onion, grated
2 large tomatoes, grated
1 tbs mixed masala
1 tsp mixed dhania and jeera powder (corriander and cumin powder)
1 tsp hurdee (tumeric) powder
1/2 tsp elaichi (cardamom) powder
1/2 tsp mustard seed
1/2 tsp jeera (cumin) seeds
1/2 tsp saunf (fennel) seeds
1/2 tsp dhania (corriander) seeds
1/2 tsp sugar
1 tsp rough salt, adjust to taste
a handful of fresh thyme
1 green chillie
a handful of fresh dhania (coriander)
a few curry leaves
100g unsalted butter
1 cup coconut milk
spring onion to garnish
Serve with hot soft rotis or with rice.
