I've usually found reverse spherification easier if you just pour the (in this case) cocktail into one of those spoons you get at Chinese take-away places, then slide it from that into the alginate solution.
@Killerhurtz
4 жыл бұрын
you were joking about drinking just the sodium alginate solution, but that is actually a thing, there are Anti-Acid/heartburn medications like Gaviscon that are a syrup mix of alginate, bicarbonate and other ingredients with that exact intended result of forming a gel on top of the food and acid in your stomach, preventing it from traveling back up and giving you heartburn. if you drop some of the medication into a calcium(chloride/lactate/gluconate) solution in forms gel pods exactly like what you made.

I am not kidding you - your tv show was the best ever. your "power stance" and job interview advice was spot on, and has even personally helped me. everything on your old tv show was great, and national geographic were idiots to let you go. and a bit of advice (take it or leave it): please don't upload stuff that could be used by viewers to physically harm other people. in any case, I think you are great. as an English teacher in Taiwan, I have used info from your scam school vids as a teaching tool in my advanced classes to great success.

That's not gelatin dude, gelatin is a specific gellig agents from animal parts (bones, eyeballs, feet) which this absolutely isn't. Consumig unreacted sodium alginate also isn't a problem, this was reverse spherification, but in regular spherification you disolve the alginate in your product and drop it in a calcium bath and if you take it out and rinse before it becomes completely solid (which would be too long) then not all alginate has reacted, and that's fine to consume as well. If you do smaller drops you may be able to create alcoholic boba pearls for in boba tea, would probably be pretty neat as well
