Malai Kofta in Silky Smooth White Gravy | मलाई कोफ्ता | Ami's Cooking
One of the most popular amongst vegetarians, this restaurant style malai kofta is sure to please the crowd. With little more efforts than other vegetable curries, malai kofta will become the show stopper on the dinner table. There are different ways to make malai kofta as I have made another version of it in tomato based gravy. Here, I have made this malai kofta recipe in an authentic Indian restaurant style with silky smooth white gravy. Please try this recipe, when you want to impress friends and family. I am sure you and your loved ones won't be disappointed.
Malai Kofta Recipe :
Kofta Making :
Kofta Outer Layer Ingredients :
350 Grams Homemade Paneer
100 Gr Homemade Sugar free Khoya(Mawa)
1 Medium Boiled Potato
Salt To Taste
1/4 Tsp Chili Powder
1/4 Tbsp Coriander Powder
1/4 Tsp Homemade Garam Masala
2 Tbsp All Purpose Flour
Kofta Stuffing Ingredients :
1/2 Cup Chopped Cashews
1/4 Cup Chopped Almonds
1/4 Cup Chopped Raisins
Salt To Taste
1/2 Tsp Red Chili Powder
1/4 Tsp Coriander Powder
1/8 Tsp Garam Masala
1/8 Tsp Cardamom Powder
1/2 Tsp Dry Fenugreek
1/2 Tbsp Sugar
100 Gr Homemade Sugar free Khoya(Mawa)
1/2 Tsp Grated Ginger
Method Of Kofta Making :
1. Combine all the kofta outer layer ingredients and knead well to form a dough.
2. Divide the dough into 12 to 14 equal part balls.
3. Combine all the stuffing ingredients and mix until it binds well.
4. Flatten the dough ball and add stuffing on it.
5. Seal and roll into a smooth ball. Dust the balls with flour. Stuff all the dough balls this way.
6. In a pan heat oil on medium heat. Stir oil and add half koftas.
7. Fry koftas by moving oil and fry until golden.
8. Remove from oil and keep aside. Fry second batch same way.
White Gravy(Curry) Making :
Ingredients :
5 To 6 Medium Onions Roughly Chopped
1 Cup Cashews
1/4 Cup Melon Seeds
1 Cup Yogurt
Water
1 Tbsp Oil
2 Tbsp Butter
1/4 Tsp Cumin
1/4 Tbsp Caraway Seeds
2 Bay Leaves
1/4 Tsp Cardamom Seeds
1 Star Anise
1/2 Tsp Pepper Corn
2 Cloves
1" Cinnamon
1 Tbsp Grated Garlic Ginger
Salt To Taste
1 Tbsp Sugar
White Pepper Powder To Taste
1/2 Cup Heavy Cream
1 Green Chili Slitted
Method Of White Gravy(Curry) Making :
1. On high flame, heat a large pan with lots of water.
2. Add cashews, melon seeds and onions.
3. Bring to boil and lower the heat.
4. Cook 15 minutes and drain the water. Also, wash with the cold water.
5. Grind smooth onion mixture, yogurt and 1 cup water.
6. Strain the gravy for silky smoothness.
7. Heat a pan on high flame.
8. Add oil and butter.
9. Add cumin, caraway seeds and whole spices. Stir well.
10. Add garlic, ginger and sauté 1 minute.
11. Add strained gravy and combine well.
12. Add salt, sugar and white pepper powder. Stir well.
13. Boil 10 minutes and add heavy cream. Mix thoroughly.
14. Check for thickness and add green chili.
15. Silky smooth white gravy(Curry) is ready.
Serving Malai Kofta.
First spread white gravy on the bottom and add koftas on top.
Cover koftas with white gravy.
Garnish with kasuri methi and chili oil.
Bonus Chili Oil Making Recipe :
Heat 1 cup any flavorless oil until warm.
Turn off stove and add 1/3 cup Kashmiri red chili powder.
Combine well and chili oil is ready.
