1 cup thick coconut milk

1 teaspoon chili powder (adjust to taste)
1 teaspoon cumin seeds
1 teaspoon fenugreek seeds
2-3 curry leaves
2 tablespoons vegetable oil

Preparation:
Clean and cut the fish into pieces.
In a bowl, mix the turmeric powder, chili powder, and salt. Marinate the fish pieces with this spice mixture and set aside for 10-15 minutes.
Cooking:
In a pan, heat the vegetable oil over medium heat.
Add the cumin seeds and fenugreek seeds. Fry for a few seconds until they start to splutter.
Add the chopped onion, minced garlic, ginger, green chilies, and curry leaves. Sauté until the onions become translucent.
Adding Spices and Coconut Milk:
Add the turmeric powder and chili powder. Mix well.
Pour in the thick coconut milk and stir to combine.
Adding Fish:
Add the marinated fish pieces to the pan. Gently mix to coat the fish with the coconut milk and spices.
Simmering:
Reduce the heat to low and let the curry simmer for about 10-15 minutes, or until the fish is cooked through and the flavors are well combined. Be careful not to overcook the fish.
Final Touch:
Once cooked, remove from heat.
Serve hot with steamed rice or roshi (Maldivian flatbread).
