Maldivian spicy curry / kulhi riha / easy curry recipe

This is one of my favourite curry which is spicy and with a little bit of tangy flavour. I have used tender smoked tuna (valhomas) for this recipe. I don't prefer vaccumed smoked tuna for this curry as it is a little bit firmer and does not taste as good as this. There is also another version of kulhi riha / spicy curry. In Sha Allah will upload that sometime later.
Ingredients:
- 3 tbsp cooking oil
- 1 nos. onion (medium)
- 3 garlic cloves
- 3 rampa leaf piece (3")
- 20 nos. curry leaves
- 1/3 scotch bonnet chilli (according to your taste, can substitute to other types of fresh chillies).
- 2 dried red chillies (cut in half)
- salt to taste (2 tsp)
- 1 1/2 cup tender smoked tuna
- 3 tbsp chilli powder / lonumirus havaadhu
- 1/2 tsp black pepper powder
- 1/2 tsp cumin powder
- 3 tbsp tomato paste
- 2 tbsp water
- 2 nos. billimbi
- 3 cups thin coconut milk
- 1 cup thick coconut milk
Directions:
- Thinly slice onion and roughly chop the garlics.
- slice smoked tuna into 1/2 inch pieces.
- In a pot on low to medium heat add, cooking oil, sliced onion, chopped garlic, rampa leaf and curry leaves. Saute till onions are tender and lightly browned.
- once lightly browned, add fresh and dried chillies according to your spice level. Add 1 tsp salt and mix well. I added more salt later.
- Add smoked tuna and stir fry for 2-3 minutes on medium heat.
- Add chilli powder, pepper and cumin powder and mix for 1-2 mins.
- Add tomato paste and mix well. Add 2 tbsp water. Cook for 2-3 mins while stiring frequently.
- Add billimbi, thin coconut milk, mix well and let it cook for 6-8 mins. Stir occasionally. Halfway through add more salt according to your taste ( I added 1 tsp more salt at this stage) and let it continue to cook.
- Add thick coconut milk and cook additional
2-3 mins.
- It is ready. Really quick, easy and tasty curry. Enjoy. I love this with roshi / Maldivian flat bread. Can't stop eating.
