Vietnamese Braised & Caramelized Catfish (Cá Kho Tộ) Recipe
*Recipe based on 1 lb of protein, double if making 2 lbs, triple if making 3 lbs, etc*
INGREDIENTS:
-1 pound fish steak/ or fish fillet, or fish nuggets (we used catfish- you can use any fatty fish fillet or pork spare ribs)
-5oz pork belly
-2 pho spoon fish sauce
-1 pho spoon soy sauce
-3 pho spoon sugar (1 is used to caramelize)
-fried garlic, fried shallot, 1 tablespoons spoon olive oil
3-4 tablespoons Coco Rico, Sprite, 7 Up
-Garlic chili oil (any)
black pepper to taste
-2 green onion
-1 cube chicken stock (optional for more flavor)
DIRECTIONS:
1. Turn on your stove to medium high
2. In any pan add oil and 1 spoon of sugar
3. Wait for the sugar to turn brown around the edges and then start stirring until the sugar is all melted
4. Add 1 tablespoon of fried garlic
*A short cut to skip 2-4 is to add oil, 1 tablespoon of garlic and 1 tablespoon of ABC sauce or any thick soy sauce to the pan and then follow steps 5 and forward*
5. Add in fish filets and then until golden on each side
6. Add 2 tablespoons of fish sauce, 1 soy sauce
7. Add as much chili oil as you’d like
8. Wait for the sauce to start to thicken and then add in 3-4 spoons of coco Rico to deglaze the pan and to braise
9. Turn heat to medium low
10. Let simmer for 10 mins and then turn off the stove
11. You can garnish either on a separate dish or directly in the pan- add in more green onion, fried garlic and additional Thai chili peppers if you desire.
