This recipe is ideal for an 8" size pan
Baking time is 40-50mins at 140C (preheated oven)
Vanilla Sponge Cake Recipe
5 egg yolks
4 tsp sugar
1tsp vanilla extract
1/2c cake flour (substitute: measure 1/2c all purpose flour then remove 1tbsp and replace with 1tbsp cornstarch)
1/3c oil (canola or vegetable oil)
1/3c water
meringue:
5 egg whites
1/2c sugar
1tbsp cornstarch
2 ripe mangoes, diced for filling and topping
Chantilly cream:
1c heavy whipping cream
2 tbsp powdered sugar
1tsp vanilla extract
Swiss Meringue Buttercream Recipe
Ingredients:
6 egg whites
1 1/2c sugar
2c butter
1tsp vanilla extract
2-3 tbsp diced ripe mangoes
