Ingredients and preparation
2 tbsp Coriander powder
Add boiled water to soak and set aside
To marinate the mango pcs add:
¼ tsp turmeric
1 tsp vinegar
A pinch of salt blend thoroughly and set aside
Seasoning mix:
(add in to the pot you are cooking the curry)
2 sliced onions
2-3 green pepper, sliced
Curry leaves
Salt to taste
1 tsp Turmeric powder for color
1 tbsp Red Chilly powder
1 tbsp Kashmir chilly powder
1 tbsp Coconut Oil
1 tbsp Vinegar
Mix and thoroughly massage and blend the above item. This is very important. Knead until the onion is soft.
Add pre-socked Coriander mix, and knead more!
Add 400 grms of sliced green mango, and mix until the pieces and infused with the spice mix
set aside for 30 minutes. Then add 2-3 cups of coconut milk (second press), enough to submerge the mango pcs.
Move to the stove.
Set the stove to medium high for five minutes
then reduce the heat to medium low.
Stir gently in one direction, clockwise or counter clockwise.
Continue until the mango pcs and soft and well-cooked.
Then add 2 cups of coconut milk (first press)
Stir gently for two minutes, then remove from the stove.
Garnishing:
Add 2 tbsp of coconut oil to hot pan.
add 1 tsp mustard seed (optional)
5 nos. of dry red chilly, cut in the middle
after 5 seconds add 10 pearl onions, sliced thinly
When onions slices turn golden brown add more curry leaves.
Add the garnishing to the mango curry.
Let it rest for 30 minutes before serving.
