this time making bugis mandi cake
Delicious, soft, chewy and legit..
coconut unti ingredients:
250g grated coconut
175g brown sugar
100ml water
1/2 tsp salt
cake shell ingredients:
300g sticky rice flour
100g steamed potatoes (mashed while hot)
65ml instant coconut milk
2 tbsp sugar
1/2 tsp salt
10 pandan leaves + 5 suji leaves)
185ml water
1/4 tsp pandan paste
1 tbsp cooking oil
Vla ingredients:
750 ml coconut milk (265 ml instant coconut milk + 485ml water)
60 g cornstarch
1 full tsp sugar
1 full tsp salt

*yields 22 cakes, if you want to get a lot, you can reduce the cake size
*large baking pan 20x20x4cm, small baking pan 16x16x7cm (greased with cooking oil)
*steam over medium-low heat, occasionally open the steamer lid so that the cake doesn't spread
*If you don't have pandan leaves, you can replace them with pandan paste
